Chocolate Chip Cookies VI

I make these every year and they are always well received. My oldest often asks when I will be making them again. I don't make any changes to the recipe and love the cakey texture and hint of cinnamon.

Gingerbread Pear Cake

Tastes great. But didn't turn out pretty at all. I'm not a fan of corn syrup so I substituted honey like a couple other reviewers. Maybe I used too much... I lined the pan with easy release foil because I was afraid of the sauce sticking to the pan. It didn't help. Most of the sauce is still stuck on the foil. Disappointing. Also I didn't have pears so used apples instead. But all if the apples floated up in to the cake instead of staying in the sauce...

Cranberry Orange Bread

I've made this as muffins a couple times. I always add 2 C cranberries and 2-1/2 to 3 C OJ and leave out the walnuts. As muffins they only take about 20 minutes to bake. They are very good. Mine tend to turn out a little dry though...

Pumpkin Muffins II

I made these muffins yesterday. They are delicious!! I did make a couple changes. I actually substituted roasted butternut squash for the pumpkin and I didn't have Allspice, so I doubled the cinnamon. This will be my go to recipe for pumpkin (or squash) spice muffins!

Ham, Potato and Cabbage Soup

This is a great recipe to use up holiday leftovers. I used the leftover holiday ham. I omitted the onion (not many onion fans around here). I used more veggies than the recipe called for so it was nice and hearty. I used dried parsley flakes because I had no fresh and did not add the caraway seed. But, what really made this soup for me, was the addition of the leftover ham broth! I mixed 2 cups chicken broth, ham broth and enough water to make it all add up to 6 cups. It was VERY good! I have more ham broth left so I will be making this again and freezing it. Very, very good.
