Italian Sausage Soup

Absolutely delicious! I'm a huge fan of homemade soup, but was getting tired of the same old vegetable, chicken noodle, and potato soups, so I was thrilled to come across this recipe. I only made a few small changes. Instead of the great northern beans, I added cubed potatoes (my hubby isn't a huge bean fan), I also added a small chopped onion, and I added half regular Italian sausage, and half spicy Italian sausage. It was SO amazingly good. I've added this recipe to my recipe box and will make it for years to come!

Asparagus, Chicken and Penne Pasta

This was a fantastic, quick meal. I followed the directions to a tee, but also added a can of diced tomatoes. SO good...and my picky husband even ate the asparagus!

My Crab Cakes

My 16 year old is a crab cake fanatic, so I knew that this recipe was a winner when he gave them a big thumbs up. Taste just like restaurant cakes and so much easier than I thought they'd be. Delicious!

Chicken Piccata II

Not so crazy about this dish. It was okay, but don't think I'll make it again. It was kind of bland and I wasn't sure what to add to "fix" it. I did add white wine to the sauce, but it still didn't help. Sorry. I really WANTED to like it!

Spanish Chicken

This recipe was fantastic! I only made small changes, such as cutting the chicken breasts into strips so they browned/baked faster, I omitted the bullion, because I used a packaged Spanish rice, I added a can of rinsed pinto beans to up the fiber/nutrition factor, I omitted the cinnamon, and I omitted the picante sauce and black olives, but added sliced jalapeno on top of the cheese. I served with sour cream and pureed avocado on the side. Added a great dimension to the dish. My VERY picky family loved it and I'm sure it'll be a regular on our table for years to come. Thank you so much for sharing this recipe!

I love, love, love halushki...takes me back to my Western Pennsylvania / Ukrainian roots. However, my father and his family always added either bacon or "fatback" to this recipe. It makes it even more amazing!

Sarge's EZ Pulled Pork BBQ

Wow! We had pulled-pork sandwiches at friends' house a while back, and I asked for the recipe. The one I received had a list of 20 or so ingredients, so I went in seach of something easier. Sarge, thank you SO much! My family loved this recipe, and it couldn't have been easier to fix. Like someone suggested, I added a splash of liquid smoke, and it added another great flavor to the dish. I have a love/hate relationship with my crock pot, but this recipe was put in the "love" pile! :o)

Bubble 'n' Squeak II

I grew up calling this Ukranian (or maybe Polish) dish "halushki", and it was made with bacon pieces and fried in bacon grease. It's fabulous this way!
