Downeast Maine Pumpkin Bread

Have to defend this recipe. I'm the fourth generation Mainer baking this wonderful recipe. Perhaps Better Homes and Gardens acquired the recipe from a Mainer. Nothing like old home baking!

This recipe was wonderful! Our Japanese homestay student made a second batch to take to her ESL class and everyone loved them. They melt in your mouth and are not too sweet. Great with a strong cup of coffee or green tea. Thanks!

Curry Pumpkin Soup

Chicken Enchiladas II

Fantastic recipe! I made these for my teens and their friends and doubled the recipe. The enchiladas were gone in a matter of minutes. They are so easy and so flavorful. I'm going to try and triple the next batch and see how they hold up to freezing. I preferred the mushroom soup. This recipe has added zest to my bland Maine cooking for my Texas husband. Thanks for sharing!

Yummy Apple Pound Cake

Gigi, thank-you so much! This cake is wonderful! Moist, full of apple flavor, and pretty to boot with the specks of cherries. This will be the holiday gift from me to my neighbors this year. Delicious! gi
