Angela's Awesome Enchiladas
Followed this recipe as stated, however, I did not put soup mixture in the bottom on the on before heating in the o oven. I thought the enchiladas would have a Weird texture. Didn't care for this meal. Will not be making again.

Curried Coconut Chicken
I made this recipe but did change a few things based on the reviews. I started by making the sauce. I added the curry, onion, garlic. I added the can of light coconut milk, tomatoe sauce and the diced tomatoes. I did drain them and save the liquid for later. I covered and cooked the sauce for 20 min w the lid on. In the mean time, I cut up two chicken breasts, sprayed the pan with oil and used 1T of curry to cook th pieces of chicken. I added the chicken to the sauce once it was cooked and then cooked it uncovered for 20 more min. I added a bit of the reserved tomatoe juice from the diced tomatoes (I didn't add at first because of all the reviews saying sauce didn't thicken) and cooked 20 more minutes without the lid. Served with rice and nan I liked up at the grocery. Will make again. Next time i will follow exactly but will not cover the sauce so it reduces properly. It was good and I have leftovers for lunch tomorrow.

Quiche Lorraine II
This was a really yummy quick summer dinner. I followed the directions with a few changes. I used skim milk and it turned out just fine. I also only had a small bit of swiss and munster was on sale so I used 3/4c swiss and 3/4 c munster cheese. I also added a few shakes of pepper. It was so good and very easy to make! It only took me 30 min to bake it. Icovered the crust while it baked so it didnt burn. Great recipe!
