Grilled Salmon I

Love. I bake this in a foil pouch in a 425 oven for ~15 minutes, then finish under the broiler for 3 minutes. (Last time I used one ~3/4lb piece of salmon). Easy peasy. Serve with rice and some veg.

Fantastic Black Bean Chili

that was seriously fantastic! we used 1 can tomatoes with green chilis, about 12 oz tomato sauce, a pack of chili flavoring and 2 cans black beans 1 can kidney beans. so happy! garnished with low fat sour cream and sharp cheddar. made corn bread muffins for the side and a green salad. great rainy day dinner!

Hearty Vegetable Lasagna

this lasagna was awesome. i used a lot of vegetables, way more than it called for. grated carrot in, put some chopped zucchini in, a package of frozen spinach ( half i put in the ricotta cheese mixture). i was so so so happy with this. also used no boil pasta. so it stayed in the oven for about 1 hour, 45 covered with foil, 15 uncovered. serious delicous.

Oatmeal Peanut Butter Cookies III

This is my go-to cookie for showing off. I dip mine in chocolate also when they're done. Who doesn't love the peanut butter-chocolate combo? Over a double boiler over medium low heat melt three 4 oz bars of ghiradelli semi-sweet chocolate, or 12 oz of semisweet chocolate chips along with about 3-4 tbsp of crisco. Dip the cookies into the chocolate. I usually dip just one side. Sometimes I dip the whole top of the cookie. You could try the whole cookie in chocolate, but thats pretty indulgent. Anyway, once dipped, set the cookies on wax paper. I do this on the cookies sheets. Then I put a whole sheet of freshly dipped cookies in the freezer. This sets the chocolate. (You can also add sprinkles to the dipped cookies directly after dipping...I shake mine on.)

Applesauce Bars

this was the most magical food creation that i have ever put in my mouth. i have never been more satisfied by a baked product before. ever. i mean wow. i used chunky applesauce and baked it in an 8x8 pan. i also didnt have pumpkin pie spice, and so i used cinnamon and nutmeg instead. mmm mmm mmm mm. thanks for this recipe. im forever indebted.

Butterscotch Apple Cookies

i was very excited to make these cookies, as apple cookies sounded scrumptious and butterscotch is a personal favorite. i left off the icing bc i didnt want to make more bowls dirty. im glad i did. after first taste, i have to say, these are the sweetest cookies i think i have ever had. good, but maybe i little too sweet for me.

White Chocolate Blondies

these were absolutely fantastic. i used ghirardelli white chocolate bars and white chocolate/semisweet chocolate chips but otherwise followed the recipe exactly. these might be the greatest recipe that ive ever baked.

Oatmeal Raisin Cookies IV

man did these go fast at work! i didnt use any nuts, as i think nuts are useless, but i did make a batch with chocoloate chips. the ones with the choc chips were eaten first, but once people started eating the ones without the chocolate they decided they liked them even more! i agree...yum, thanks for the recipe
