Southern Turkey Cornbread Pot Pie

Not sure what I was expecting, but it was better than I could have imagined. I did add peas and dice carrots along with the corn. My family loved and the leftovers were good for lunch the next day.

Lentil and Sausage Soup

I make a similar soup where I uese beef stock, sliced carrots and cabbage (about 2/3 cup) finley shredded instead of celery and about 1/2 cup diced tomatoes. Served topped with crouton and Parmesan cheese.

Split Pea Soup with Rosemary

Used pre-cooked bacon because that is what I had on hand and added 2 potatoes and good thing because this soup would have not been thick enough for my family's taste...Garnished each bowl with large croutons and freshly grated parmesan cheese.

Laura's Quick Slow Cooker Turkey Chili

Used 1 can low sodium beef broth and 1 can tomato soup for a heartier flavor. Also used 1 can black beans, 1 can pinto and 1 can white beans for added fiber and flavor. I made several times and sometimes throw in corn.

Roasted Portobello Mushrooms with Blue Cheese

If I could give this more stars, I would. Went over well with both vegetarian and meat lovers. Small changes, added olive oil and balsamic vinegar to soy sauce before roasting in oven and then added toasted pine nuts with the blue cheese as someone else had suggested. I cannot imagine this without the pine nuts. Served with 2 other allrecipe favorite: roasted potatoes w/basil tom & garlic, and broccoli slaw.

Fruit Dip

I didn't have pineapple juice so subsituted orange juice and added a tsp of vanilla. This dip was such a hit at the company pot luck and this group is hard sell! People were dipping everything in it (cookies etc), not just the strawberries I brought.

Steak Sauce

Taco Salad with Ranch Dressing

Good. I add a small can of mexicorn and one can of black beans drained and rinsed for more texture, flavor and fiber. If I have on hand I top each serving with a few slices of avocado.

Baked Cod

So good and so easy. Few changes using what I had on hand. Used plain bread crumbs, added 1/2 tsp dry mustard and 1/2 tsp McCormick Shilling Mediterranean salt mixture, 1/2 tsp olive oil, blended and sprinkled on top the fish that was covered with ranch dressing, patted down and baked as directed.

Peppermint Patty Brownies

I used a glutten free boxed brownie to make for a friend. I just put half the batter in a greased glass 8X8 baking dish. Added chopped pepermint patties then the rest of the batter. They were good, nothing stuck and the minty flavor masked the normal after-taste of the gluten-free mix.

Super Fast and Easy Chicken a la King

A good recipe to use while teaching your children to cook. It is a good confidence booster, easy to customize (like adding peas etc) and can be served over toast, biscuts, rice, noodles etc.

White Chocolate Blondies

I am convinced that this recipe is full proof. I was busy talking with my husband while cooking and accidentally creamed the butter and mixed with the eggs (was also going to make chocolate chip cookies and must have had that on my mind). I ended up melting the white choc (Nestle Premier White Morsels) slowly in the microwave, they were not totally smooth, but I beat with egg/butter mixture for about 2 min on medium before folding in the flour. Also I spred a little batter at the bottom of my pan before adding the choc chips to so they wouldn't end up at the bottom. These came out perfect!

Piggy Pudding Dessert Cake

Made before, but this time I lightened it up a bit by usining 1% milk and only 1/2 the amount listed, light cream cheese and light cool whip to cut back on calories. Topped with chocolate sprinkles because my family doesn't like nuts. No one seemed to miss extra fat and calories.

Potatoes Romanoff

This is not traditional Potatoes Romanoff and please skip the "imatation cheese" (aka Velveeta) for some high quality cheddar and leave the potatoes a bit lumpy. It won't poof as much, but will add texture.

Cream Cheese Frosting II

The best! I made as is, but halved the recipe. More than enough for a 9 X 13 cake. I used it to frost and eggnog cake. Received rave review... Another year later and still the best. I just made my annual eggnog cake, used this glazed adding 3 Tbs of eggnog. I tell you this is full-proof and be customized so easily!

Terrible! Omit the olive, substitute lime for the lemon, add 1 T sour cream and 1 T pico de gallo. In other words, use a competely different recipe.

Baked French Toast

Took a lot of the advise, reduced milk and eggs etc. Bottom line, it just wasn't that tasty. I had 4 hungry teen-age boys who eat just about anything that didn't even bother to finsh their serving.
