Bacon Jack Chicken Sandwich

I added bacon pieces to ranch dressing and spread on a wrap, used spinach instead of lettuce - all else the same. My family asked for twice since I made. This won't be your signature dish or glory that gets served to guests, but it is an easy family pleaser - and we all need those.

Hummus I

The best. Can't stand cumin and low calorie without the olive oil. I did add 1/4 cup plain greek yougurt (for extra creamy texture) and roasted garlic for some kick.

Grilled Halibut with Mustard Dill Sauce

Very tasty but only after I made so many adjustments to the sauce it didn't even resemble the original. I found everything to be way out of proportion. Had to add garlic powder, Pinch of sugar, squeeze of lemon and onion powder. Had to double both the sour cream (used instead of yogurt) and dill to balance out the mustard. After all that it was not bad, but not to die for.

World's Best Lasagna

Very good, but according to our Italian exchange student, not authentic. He said the Ragu style sauce was great. Considering that he has lived all over Italy and cooking is one of his passions, I would have to believe that all though a very good recipe, it is an american style lasagne.

Day Before Mashed Potatoes

Made for Thanksgiving with much success and ease. I did add a little bit of half-n-half before turning on the crock pot. I did not add onion powder because I don't think they needed more than salt n pepper when serving topped with gravy. I believe the cream cheese is the key ingredient that keeps them from drying out.

Lemon Pepper Peas

Just did a trial run for Thankgiving and these will definitely be on the table. I made recipe as is, but added additional dill and lemon pepper after tasting. So few ingredient, so easy and so, so tasty.

Chili Cheese Dip III

People were scraping the sides of the crock pot for more - no kidding! Night before, I cooked on stove 2 cans of Stag steak chili(with beans) incorporating the cream cheese until well mixed, took off the heat and added 1/2 cup of shredded cheddar cheese and put away. Next day I put all in a 1 1/2 qt crock pot with a bit of water to keep it from getting to thick, topped with some more shredded cheese and green onion for garnish and served at with Frito scoops and blue corn tortilla chips.

Cuban Ropa Vieja

I have used this recipe at least a doz times. Fed to Cuban friends with much approval. I learned that the cut of meat matters. Tried the chuck roast but too greasy. London Broil works the best. I learned that it is faster and easier and produces the same results (possibly better) if you just toss everything into the crock pot and go. So you can omit the olive oil. If I don't have cilantro in the house, I just add extra cumin. I always serve over white rice with black beans on the side. Pure simple and delicious and authentic. You don't need extra spice unless you are trying to turn this into a mexican dish.

Warm Pepper Dip

Simply wonderful and just think of all those antioxidents. Only 4 stars because as written it has too much uneccessary fat and calories. I lowered both by roasting the veggies in only 2Tbs of olive oil on a lined and sprayed cookie sheet and then subbed half-n-half for heavy cream. Flavor was not compromised. Served warm with pita bread wedges along side a Greek salad as a first course for a mediterranean dinner. Side note: If you have never roasted veggies before, make sure you do not rush this step. The roasting is key to bringing out the flavors. Can be easily adjusted to personal tastes. Presentation is lovely red cream color.

This is basically a falafel using meat instead of chickpeas. It takes too many adjustments to rate higher. For added flavor make a classic tsazziki sauce to top it.

BBQ Bacon Ranch Dip

Seems a lot of people complained about how hard this dip is, well I serve in a pie plate with a cheese knife and crackers. People understood and used the knife so no broken crackers or difficulting scooping. Used Bull's Eye brand BBQ sauce because it always wins taste test (and no HFCS), used pre-cooked chopped bacon - did not measure just dusted across the top then followed with some roasted chopped chicken breasts. Partially made the night before, took to a potluck the next day adding the tomato, green peppers and cheese just before serving. The unmelted cheese was not an issue. People really liked this as a change of pace from the "taco" version which doesn't have melted cheese either. I am going to add the green onion next time as been suggested by others. 5 Stars for presentation - really looked nice in a pie dish sitting on a platter surrounded by crackers.

White Chili II

Made stove top. Used only 2 jalapenos, forgot the ginger and drained the beans before I realized I shouldn't have. Substituted corn and a small zucchini for the yellow bell pepper. No need for flour or butter since I wanted a brothy, thinner soup. Sauted everything in olive oil. I think this is a no fail recipe and can easily be customized to your taste. Served with sliced avocado on top, rounding out the meal with a tomato salad and warm corn muffins drizzled with honey.

The only change I made was to use apple sauce instead of butter or lard. Still, my family and I agree that it would take more than that to make this taste good. Did I miss something with all the rave reviews??
