Calabacitas Con Queso - Zucchini with Cheese

This was really good!! I normally like a lot of seasonings, but this was perfect as is. The combination of vegetables works well. I skipped the cheese, and served it as a side dish to enchiladas and mexican rice. My husband, who doesn't like zucchini, thought it was really good too!

Banana Sour Cream Bread

I feel terrible not liking this since everyone else gave it rave reviews! I followed the recipe exactly, but the texture was so wierd! The taste was ok, and it was better pan fried the next morning, but I will not make this again. Sorry!

Corn Dog Casserole

This was good...tasted more like cornbread with hotdogs in it than a real corndog. I skipped the sage and the celery...my husband really liked it, will probably make again when we have leftover hotdogs! Thanks!

Kangaroo Chops

This was really good!! I love the no clean up! I read the other reviews so I cooked the potatoes in the micro for about 6 minutes first. They came out perfect after baking. I also cooked for 50 minutes, but it really was 5 too long. I used a pork tenderloin instead of chops, and added mushrooms. Everything was flavored wonderfully!! Will make again, Thanks!!

Great recipe! Loved the sweetness of the corn and brown sugar! Liked it so much for dinner, we made it the following morning for breakfast, with a layer of scrambled eggs. Yum! Thanks for the recipe!!

Stuffing Meatballs

These were great and so easy! I used the pork seasoned stuffing mix and rolled them in flour before pan frying. Served with a sour cream sauce over cabbage and egg noodles. Thanks for the recipe!!

Fresh Veggie Pockets

This was really good and so easy! I had guacamole on hand, so I skipped the spread. I didn't use salt but seasoned the cucumbers with chile lime powder. I prefer to eat the pita like a taco rather than silcing them open and stuffing...I think they hold together better. The sunflower seeds really made the recipe. Thanks!!

Breaded, Fried, Softly Spiced Tofu

This was excellent! I soaked it in a vegetable broth from a soup the night before, and breaded it with half flour and half onion ring batter mix. We dipped them in a hot and sour sauce and a marinara sauce...made them taste like mozzarella sticks! Thanks for the recipe!

Tasty Tender Pork Tenderloin

I have to give this 5 stars because it was SO good, but I did alter the recipe a bit. My tenderloin came pre-marinated in teriaki, so I wanted to go with that flavor. I used half a bottle of asian salad dressing with a quarter cup of maple syrup for the sauce, and skipped the onions. Came out so tender! Thanks for the recipe!
