The Iguana Gauntlet

Hello All! Well, the tofu burgers last night were a hit. Even though T swears he hates tofu, he ate all of his, a third of mine, and a bite out of another that he later had for breakfast this morning! This is what I did:
Drain tofu for a few hours, then squeeze out as much moisture as possible
Cut the cube into 4 big slices
Bake the naked tofu on a lightly oiled tray at 350 for 10 minutes each side
Dip in egg wash, flour, egg again, then crushed water crackers
Drizzle both sides with olive oil, bake at 350 til both sides are golden
The texture was perfect! We served them on big onion buns with red onion, cheese, mayo, and mustard, and a side of coleslaw.
Tonight I hoped to make spinach salad for dinner, but the grocery didn't have any spinach. This is not unusual- sometimes there is no bread, or no tomatoes. There was a packaged caesar salad on sale for $1.99, normally $6.99, so I got that instead. I hoped to add a mango to the salad, but they were $1.99 each, which is outrageous, since they are locally grown, so I got an apple instead. Will also put on carrots, red onions, and a few hard boiled eggs. Bought half a chicken breast for T for $3.71, so total for the week is $87.35...$17.65 into vacation fund!
On my way to the market I snapped a few photos of the Iguana Gauntlet. They congregate on the dock, and EVERY afternoon my dog Miss C and I have to walk the gauntlet. Sometimes there are 3 or 4, sometimes more than 10. They are more exciting to her than cats. And they are not afraid. We are trying very hard to break her of the habit of lunging and barking, but it's been a slow process. As ferocious as she acts, they just sit and taunt her. If she can manage to walk past them- twice- without pulling me into the lagoon or my arm out of socket, then she gets her favorite treat of baby carrots when we get back to the boat. Iguanas here are a protected species, and they also carry salmonella, so we really can't let her get one.
