Galley Notes: Cooking for $15 a day...on a sailboat!

Hello Everyone! One of my least favorite things to do is sit in traffic...I am sure most of you would agree. Earlier this week, I had to make a delivery of my jewelry to one of  my accounts, a boutique at a resort by the airport. My studio is in the country, about 10 minutes from where we live on the boat, and my destination was less than 6 miles away- but it took me 45 minutes to get there! Sometimes -most times- the traffic through town is horrible. Bumper to bumper. I guess I am lucky, though, because my Jeep is breezy and you can't beat the scenery. The view from the boutique isn't so bad either!

When I lived in Chicago, many years ago, it took me a good 2 hours to get to school or work. Walk to the bus stop...ride the bus to the subway...ride the subway, walk to the destination. I didn't like it then either, but that was just the way it was. Now I complain about 45 minutes, and I never go through town unless I absolutely have to. It's funny how you can forget to keep things in perspective!

Anyway- dinner the last couple of nights have been BBQ Pulled Pork Pizza and Mushroom Alfredo, ($14.13) using lots of leftovers. Tonight is Tofu Burgers and Coleslaw. Somehow, tofu, carrots, buns, an onion,and mayo cost me $17.54. So $80.92 for the week so far! I am trying out a tip for the tofu that I learned from some comments on tofu recipes on this site...bake the tofu first, then do the egg-flour-egg-breadcrumbs thing. I f I have access to a freezer, I do freeze the tofu first, but I have never tried the baking was interesting in the oven. The moisture kind of bubbled and sizzled. I hope the finished product is good.

Isn't it funny how tofu costs more than the pizza? Let us know how it comes out, Barbara! I guess its healthier but I've had no luck with getting anything tasty out of it!

About Me
I live on a sailboat in the Virgin Islands with a tiny fridge, so there is no room for leftovers. I love the ingredient search on this site...I never waste anything! It's very expensive to live here, so we do a menu challenge-trying to spend less than $15 a day on food.
