Galley Notes: Cooking for $15 a day...on a sailboat!

Happy Father's Day to everyone! We do not have kids, but we do have a dog, so we celebrate dog-mother and dog-father's day. I am making a special meal for T tonight- Oven Baked BBQ Ribs and Sweet Restaurant Slaw, both from this site, along with cheesy mashed potatoes. I have never made ribs before, so I read all 120 reviews, and they are starting to smell wonderful! The smallest package I could get was 4 pounds, so I expect to use leftovers later in the week. I spent $37.73 for ribs, ketchup, cabbage, onions, vinegar, and beer and wine. Way over my $15/day budget, but I should be able to make it up later in the week.

Tonight is the last night of apartment/dog sitting, so I also wanted to make something that I can't make on the boat. Our oven isn't big enough for a rack of ribs, and having it on for 3 hours would make the boat ridiculously hot. This apartment is on the North side with good breezes.

I made my cheese butt macaroni and cheese last night, and it was fabulous! We had a friend up for dinner- she'd never been to this apartment- and as soon as she walked in and saw the view, she said "I wish I'd have brought my camera!" It's funny, every place here has a fantastic view, and each is better than the last. (She has an amazing view from her apartment as well.)

T and I took the afternoon off the other day and went to one of our favorite beaches, Secret Harbor, which of course, has great frozen drinks to go with the view!

Just want to pop in to say how much I enjoy your blog. Very interesting premise and a really nice unifying theme. It combines two interesting topics: living on a boat somewhere exotic (um, just wow) combined with the $15 a day thing. FUN! Pretty pics too.

About Me
I live on a sailboat in the Virgin Islands with a tiny fridge, so there is no room for leftovers. I love the ingredient search on this site...I never waste anything! It's very expensive to live here, so we do a menu challenge-trying to spend less than $15 a day on food.
