I Love Frozen Pizza in the Rain

Good Day! Yesterday was one of those wonderful days when you both have the day off with nothing to do and it is rainy and cozy all day. Ok, I confess, too much rain and the boat leaks, but still. We were much too busy watching DVD's all day to cook. We could have TV reception at the dock, but we choose not to, so we watch DVD's all the time. We are currently addicted to Prison Break. We have a couple of video rental places here, mostly new releases, and we also subscribe to NetFlix, which I highly recommend! So lunch was a coke and frozen pizza ($14.48) and dinner was canned chicken noodle soup and toast ($3.18).I really try to avoid the processed foods as much as possible, but there is a reason they are so tasty (lots of fat and salt and everything else bad!).
Tonight I am making sweet potato enchiladas with our leftover fish taco ingredients. I used to think that "sweet potatoes" and "yams" meant the same thing, but here in the grocery "US Yams" are the orange ones, and "Sweet Potatoes" are purplish on the outside, white on the inside. I have cooked with these, and they taste about the same. Once peeled, though, the local sweet potatoes take on a green tinge that kind of bothers me. So I am using yams tonight, using as inspiration a couple of different recipes on this site. I am combining the yams with cottage cheese, jalepenos, onions, and the usual seasonings. Instead of enchilada sauce I am using packets of Taco Bell hot sauce. It is T's favorite...we don't have a Taco Bell here, but he mentioned he wanted some once from a friend visiting from the states, and it kind of snowballed. We have people sending us BOXES. It is kind of out of control. So- yams ($1.52), onion ($.57), cottage cheese on sale ($1.99), jalepenos ($1.19), and cheese ($4.09). Oh, wine (my typical budget buster) was $10.99, so a total today of $20.35!
