Crustless Spinach Quiche

Very good! I added 1 chopped leak, garlic and fresh basil- adding some non fat cream also gives it some richness. I served it with roasted baby potatos and garlic and steamed veggies- YUMMY!!!!

Best Ever Blueberry Cobbler

This was very good. I threw in a few raspberries with the blueberries . I used water down lemon juice ( 50/50)- which gave it the tart taste I like. I doubled the biscuit part for better coverage. I added cinnamon, nutmeg and that was also very good!

Fresh Herbed Halibut

Ditto with the oil. Needs very little. I put just a bit in ( Tablespoon) and got happy with the lemon juice, dill and garlic and fresh pepper. I put in in my toaster ( broil setting)oven for 15 min but really 12 min would have been fine. It ws very nice.

Big Soft Ginger Cookies

The texture was great as was the flavour but will add a lot more ginger next time. It was more of a spice cookie- very nice but not super gingery-which is what I'd like- but will make it again as the softness was just right!!

Chicken Stew with Dumplings

This was very good. I would like the broth to be thicker-which I will do next time. I added green beans and swiss chard, carrots, onions and peas as that was what I had. I added herb de provence ( nice blend of spices) and coarse pepper. I also used leftover chicken. I did not have parsely for the dumplings- but cilantro worked- did not need quite all of the milk for the dumplimgs either.

Shelly's Meat Curry

I liked it. My boyfriend so-so. It is really a stew with curry flavour- nice comfort food. We added lots of veggies: eggplant, mushrooms, zuchini,cauliflower and lots of garlic. Added curry powder as we did not have cardomon. Taste better warmed up the following day

Easy Cheese and Garlic Scones

Good. I used the extra butter and less milk and lower oven as suggested ( took 10 min longer). I added thyme and rosemary and a bit more cheese. I did not roll it out- I just formed it in my hands and it turned out quite nicely- Flavour and texture .

Risotto with Sun-Dried Tomatoes and Mozzarella

I liked it as did my boyfriend. I used half an onion and added two tablespoons of pesto to sub for mozz cheese as I only had parm cheese on hand. It took closer to 35 minutes. Easy Morning Glory Muffins

Excellent. I did 1/2 cup of oil and 1/2 cup unsweetned applesauce as suggested. Also, added nutmeg and clove. I was very generous with the raisons and held back a bit with the coconut. Also used all whole wheat flour and 1 cup of brown sugar. Very moist. And yummy. A keeper

Kickin' Collard Greens

I had never cooked collard greens before. But I missed them. Always thought it was a hassle to make. But this is easy and VERY good. I bought extra thick bacon...nice.
