Squash and Pork Chops

This was a good dish. I took the advice of others and cut my squash a bit thicker which worked out well. I trimmed this down to a dish for two and used a small acorn squash. We will do this again :~)

Summer Chicken Burgers

My rating has more to do with my substitution than the recipe itself. USE AVOCADO! I grabbed some avocado spread instead and although it was not bad, this sandwich would have been MUCH better with real avocado. The idea is great and the chicken was too, but sometimes leaving well enough alone is worth the extra time and effort it may take. UPDATE 07/2012: We had this again the other night and made them with avocado slices. I upgraded my rating from 3 stars to 4. It was DEFINITELY worth the small effort it takes!

I too was fearful of the mix it all together approach but it works! Third time making it my yeast was bad, but otherwise this has been a go to keeper!

Cabbage Hamburger Bake

Crispy Chicken Strips

Excellent recipe. Next time I think we will try baking, just for the health aspect. I did add extra pepper and garlic due to our tastes, but it would have been good as directed. For bread crumbs I ALWAYS use crushed croutons. This time I had garlic and parmesan on hand which was nice without being overbearing. Do use enough oil to keep your chicken from sticking!

Famous Butter Chicken

I gave this 4 stars due to changes needed to the original recipe. As suggested by others I cut the butter and the time. I will add more pepper next time, maybe play with some other spices too, but there WILL be a next time in our house. This was a very good starter recipe for just about any combination of spices one might want to add. I cooked it for a birthday dinner and everyone liked it, well almost everyone. I made some nuggets for my great nephew but being the VERY picky eater he is he didn't want to try them, so I took them for lunch the next day....his loss! Very tender and juicy and they look so crunchy even though they are actually soft breaded.

Southern Baked Yellow Squash

Halved this one for just the two of us and it was FANTASTIC! As suggested by others I cut down on the butter on top. I used fresh candy apple sweet onions and fresh yellow squash from one of our local farmer's markets. Not having time, room, or energy for a garden I find the farmer's markets a huge plus to our meals. Only thing I may do different next time is skip the sugar. I just didn't see the use. (Maybe it's because the onions we use are sweet enough.)

Chicken Diablo

FANTASTIC! I was honestly expecting just a nice meal but this was much more than expected. Husband made this while I was at work and WOW! He substituted salsa for the hot sauce and served it over a bed of white rice. We will opt for wild rice next time but otherwise no changes! This one is a definite keeper! ADDED AFTER EATING AGAIN.....Brown rice works very well also. This recipe is just fantastic!

Blue Cheese Stuffed Mushrooms with Grilled Onions

EXCELLENT! We had guest comming for dinner and one of the girls is a veggitarian. We were having country style ribs, so I prepared vegie kabobs for her and these mushrooms for all of us. The ONLY reason I am giving it 4 instead of 5 stars is because I did alter them a bit. I skipped the onions all together and used Gorganzola cheese as per another reviewer. EVERYONE loved them and they were gone in a big hurry!

Meatball Sub Sandwiches

Very good meal sandwich (not a lunch thing unless you're REAL hungry). I will definitely double the sauce next time as others have suggested. It was VERY good and there just wasn't enough. We used wheat sub rolls as we prefer wheat bread.....tasted great!

Mama's Chicken Enchiladas

I get rave reviews from everyone I serve this. My husband does not like the traditional sour cream based sauce used for Chicken Enchiladas so I use red and green enchilada sauces combined and use only chicken breast meat for the tastiest chicken enchiladas ever :)
