Blueberry Buckle

Excellent! I think I'll use a larger pan next time. I had trouble getting the middle done. I've made this two times and it's happened each time. I even baked it for an additional 10 minutes. It's really nice and moist and delicious.

Kielbasa Stew

Not too bad, but not what I expected. The flavor was good, but I like thickened stews and this definitely is more toward the soup category rather than a stew. Also, next time I would serve the sour cream on the side. I forgot to tempter the sour cream, so it curdled.

Sausage-Stuffed Eggplant

Delicious! It was a hot day and I didn't want to heat-up my kitchen so I made this on the grill. It turned out really well. I didn't have Italian sausage, so I substituted regular sausage and just added a little more Italian spices.

Simple Country Ribs

These were very tender and delicious. Probably the best rib recipe I've ever used. I never did ribs much because they always turned out to tough for my taste, but these were very flavorful and easy to prepare. Thanks for sharing.

Hearty Ham Casserole

I was a bit disappointed in this recipe. There wasn't a whole lot of flavor. When I heated the leftovers, I added a can of green chilies. Much tastier.

Stephen's Chocolate Chip Cookies

Yummy! These were great! I've been making chocolate chip cookies for ... well, let's just say a very long time. I always use to use the Nestle Toll House cookie recipe. Stephen's recipe definitely out-shines the Toll House recipe. I didn't have any almonds on hand so I substituted macadamian nuts. My daughter and her family loved them. My 6-yr. old grandson said that he wants me to make these cookies every time now. Thanks Stephen.

Incredibly Easy Chicken and Noodles

I've been looking for a recipe that would come close to my grandmother's chicken and noodles. This was it. This recipe is definitely a "comfort food". A bit heavy but very tasty. The frozen noodles I used didn't work very well so when I make it the next time I'll try and find another brand.

Red Potato Salad with Sour Cream and Chives

I liked this potato salad but it still lacked flavor. I added crumbled crisp bacon and it gave it a boost. Yummy!

This was an excellent dessert! Easy to put together. Maybe a little heavy on the cinnamon on top, so I'll probably cut back on the cinnamon next time.

Almond-Topped Fish

This dish is delicious! The only adjustment I made was to increase the amount of topping since I was preparing 6 fish filets. I used 1/3 cup each of light mayo and parmesan cheese. I would never have dreamed of onions with fish but it was great. I'm looking forward to fixing this dish again since it was so easy.
