Mexican Cornbread I

You've done it again! Another great recipe. I made it using the adjusted suggestions, so half the butter and the sugar. I added a tiny amount of coloured peppers for presentation. Dang, it's good. I can't imagine this lasting too long around here...oh and I used jalapeno cheddar.

Outrageous Chocolate Chip Cookies

I don't know if it's because I skipped dinner, but I thought these were delish! I followed other reviewers' advice and ground the oats. I used my own oats/chia/flax mix I usually make brekkie with. I used 2/3 ww flour and 1/3 white, crunchy peanut butter and probably half the sugar. These taste healthy, well as healthy as you can get with a cup of chocolate chips AND peanut butter. They do not spread, but if you roll them and flatten, they look GREAT and not like the lumps that were my first batch. I agree with others: there is no specific flavour, but they remind you of all three, well two in my case since I ground my oats. Next time, I will blend the ground oats mixture with the flours and THEN stir in the wet ingredients! Not a bad half an hour spent!

Peanut Butter Cup Cookies

I used the recipe and made cookies and not cups AND no candies in it. Next time I'll add more peanut butter and less sugar. I also substituted oats and chia for the 3/4 cup of flour. Obviously, the recipe is very forgiving. I liked it a lot.

Curried Butternut Squash and Pear Soup

Baked the squash with fuji apples instead of the pears. I had to TRY not to eat the whole thing in one go. SO SO good!!! My new go-to dish. It has a depth of flavour that I wasn't expecting. Yum! Yum!

Black Bean and Corn Quesadillas

Pretty good. My son's never had black beans before and he ate it. It was a little too sweet for my liking as the corn was sweet as well, but it definitely was interesting. Will make again!

Chewy Coconut Macaroons

Finally made this after printing the recipe more than 2 weeks ago! hehehe... I had grand intentions of dipping them in chocolate and then realized I had no chocolate so tossed in what I had: cranberries and pecans! Everyone loved it and said it wasn't too sweet. Great recipe that I can see can be used as a base for a host of other flavours.

Quick and Easy Alfredo Sauce

Made it in a hurry tonight. Very easy to make. Did it while talking on the phone! It was really quite heavy and both my son and I didn't finish our plate. May have been the whole wheat spaghetti we were eating it or could have been the margarine...I don't know. I found it didn't really have a lot of flavour and needed some salt, but when I'm eating my leftovers tomorrow for lunch, I'll toss it with some pesto. Who knows, it might work! lol

Jalapeno Popper Wontons

I made this for a BBQ for my Trinidadian group and it was a hi. The presentation sealed the deal for me! I used Light Onion/Garlic cream cheese and added some mozarella (which I could have done without since it didn't add anything to the flavour) and baked for a few minutes with the wrapper put into mini cupcake pan. I then topped it off with thai chilli sauce. Hmmmmm.....the small tub of cream cheese 250g made 48 thingies (what would I call them? cups?) I'm interested in using different flavours to make a kid-friendly version of this. Very, very easy but looks like a lot of work! hehehehee...

OREO Mini PHILLY Cheesecakes

Why did I ever think I could resist this once it was baked??? I made a batch of 12 with the regular Oreos and boy was it GOOOOOOOOD. I made it in the morning while I was getting the bacon ready so it could be chilled before an afternoon party. Yummy! Is it tacky to eat your own stuff at someone else's party? hahahah...I went and bought more and made 2 dozen minis for the hosts and to share at work...24 mini delights for under $10!!! Magical! PS. I did add vanilla and crushed oreos in the batter as others suggested and maybe Im nuts but it wasn't super sweet to me. Meh! for the minis, no crushed ones but I stuck one on the top for flair! :)

Peanut Butter 'n' Chocolate Bars

Wow! Nice! The only thing missing is a bit of shredded coconut for texture. I'm going to try to make this next time with oats and raisins rather than taking the chocolate route. Love, love, love it!! I don't really like peanut-flavoured desserts but this? Yum!

Magic Cookie Bars I

Sweet Moses!!! This was SOOOOOOO GOOD. It's really sweet though. I eyeballed the time it took to bake and it's crunchy on the edges but THAT'S THE BEST PART! As someone suggested, I added oats and used a combination of mini dark chocolate chips, regular chocolate chips and some peanut chips on the top as well as substituted some oats I had on hand for the portion of coconut -- all in an attempt to reduce the sweetness. Also used a smaller tin of milk. It was ridiculously easy to make. It's not the healthiest thing I've ever made but for one tray, I made 16 bars so I could even make it bite-sized. I wonder what would happen if you mix everything together and do a la macaroons? hmmm....
