Mock Pecan Pie I

Very easy and great tasting. I decreased the white sugar in half because I used sweetened coconut. It was perfectly sweet. I needed to cook mine for about 40 minutes. When checking for "doneness", the pie should only slightly jiggle when moved. Allow the pie to completely cook before cutting. We kept in fridge to help keep it firm.

Morning Glory Muffins I

I used equal parts WWF and all purpose flour, with a few tablespoons of bran mixed in. Chop apples into small pieces, makes the muffins easier to eat. I reduced the sugar to 3/4 cup and it was still pretty sweet. I added a handful of coconut. I used equal parts apple butter and unsweetened applesauce. When my batch of fall apple butter is gone I am sure applesauce will work fine. I also reduced the oil and will possibly substitute with applesauce next time. I forgot the nuts but still sprinkled wheat germ on the top. Great recipe and they freeze well!

Quinoa and Black Beans

Very good dish! I only used one can of beans and think 2 cans would have been way to much. You can play with the spices and make it to your liking. You can also add some peppers when sauteing the onions. I look forward to making this dish again.

No Roll Pie Crust II

Peanut Butter Crispies II

I have been eating these cookies since I was a little girl. They are a family tradition! We mix the sugar and corn syrup and cook until clear. Remove from heat and add peanut butter until fully mixed. Finally fold in cereal. Use wax paper to press into the corners of pan. Melt equal parts of semi sweet and butterscotch chips and spread on top. Let completely cool then cut into one inch pieces. Oh....we call them Kris Kringle's.

Lentil Soup

Great base for a soup. Additions and substitutions are endless. I followed the recipe with the exception of adding spinach. Hearty fresh baked bread is a must! Thanks for the recipe, it is a keeper!

Coconut-Cornflake Cookies

Great cookies! Beat eggs until stiff...it may take up to five minutes. Only used 1/2 cup sugar becuase coconut already had sugar in it. May even reduce sugar to 1/3 next time. FOLD in the other ingredients. Good cookies for people with wheat allergies! Thanks!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I love these pancakes! They have become a family favorite. I decrease the baking soda a little and add vanilla and cinnamon. I also cook them in a cast iron skillet. They freeze well and are easy to reheat in a toaster over for a quick breakfast. Warm blueberries and Michigan maple syrup are a must!
