About this Cook
I am a stay at home mom of two beautiful children and I cook daily for my husband and kids. I enjoy finding new recipes that will earn a spot in my own cookbook that I'll pass down to my daughter. I love old time tested recipes but once in a while I try something a little exotic just to mix it up. To me cooking and food is as important as going to church on sunday brings people together, it brings a smile to your face and when times has passed, you may forget what kind of perfume your momma wore but you'll never forget the taste of that perfectly roasted sunday pot roast she fed you....
My favorite things to cook
I cook a lot of southern comfort food. I usually lean toward real meat and potatoes type of meals but as my kids are more and more active I have started to integrate some super quick, healthy, kid friendly meals.
My cooking triumphs
I think every time I cook a dish that I am proud of and it gets good reviews from my "taste testers" I have triumphed again. I don't think i have to cook something extravagant to impress :)

Chocolate Frosting II
very good icing! I used a little less sugar than it called for and a bit more milk and it was just enough to frost a two layer 9inch cake ( not filled though) A great basic recipe to have on hand!

Chicken Enchiladas II
great tasting, easy, quick to make, budget friendly and has family's approval! That's how i determined this five start rating! Only changes i made was using chicken soup because i was out of mushroom soup and whole wheat flour tortillas because i was out of regular, and I used white onion because i was out of green onion. very easily adaptable recipe!

Broccoli Chicken Divan
Very versatile recipe... Its very kids friendly but at the same time has a very sophisticated taste for adults. This is great for a quick meal, a meal to bring to someone, a church potluck, or just a weeknight dinner. I baked mine in a 9x13 in glass pan and it came out perfect. The only other thing i did different was add a little more milk to the soup to make the sauce go further since i put it into a bigger pan.
