Easiest Eggplant
This is such a good way to get a deep-fried taste without all of the fat! I wanted to make this the other night, but didn't have an eggplant. So, I cut large flat pieces of zucchini and used them instead. Amazing! My only complaint was that some of the breading came off during the baking. It was still really really good though!

Pumpkin Cake I
This was amazing! I did use some applesauce to cut down on fat, but this doesn't cut down on flavor at all! Also, I didn't have cloves so I used more cinnamon, nutmeg and allspice. In reference to another review, allspice is not a combination of the other spices. the other spices can stand in for allspice as a substitute but Allspice is the dried, unripened fruit of a small evergreen tree, the Pimenta Dioica. The fruit is a pea-sized berry which is sundried to a reddish-brown color. Pimento is called Allspice because its flavor suggests a blend of cloves, cinnamon and nutmeg.

Best Ever Spinach Artichoke Dip
This recipe was very good...though I did make some changes. I can't leave any recipe alone! I doubled it, as it was for a party. I used roasted garlic alfredo sauce, some Mrs. Dash, and half of a large jar of roasted red peppers, chopped. For the cheese, I used a Parmesan blend, and also a block of grated white cheddar. VERY good!!! Leftovers would be great on a sandwich, or mixed with pasta or rice!
