Rice Lasagna

Gluten free, and you don't really miss the noodles! My hubby requested pepperoni on one half of this lasagna, under the top cheese layer. I added 2 little onions to the ground beef just to sneak in more veggies. Very good, excellent for leftovers. It is pretty oozie after you take it from the oven... so I let it set for about 15 minutes. Will absolutely make again!

Apple Crisp II

Well, I altered it by leaving out the cup of sugar poured over the apples... and it was still amazing. SO good! Brought it camping and actually took home leftover because it was too good to just throw away with the other camping yuckies! Cut the sugar, though! Making it again for Thanksgiving... right now!

Chicken and Black Bean Casserole

Great! I made so many mods... but it made the process simpler and healthier. First of all, I added 1 cup of corn, 2 cups of chopped kale, 1/2 cup of water to moisten the rice, and a can of kidney beans. I left out the butter and onion (Did not have an onion), so I chopped up the chicken, kept it raw, and threw EVERYTHING into a casserole dish, stirred it up, covered with foil (VERY important), and cooked for about 80 minutes. Only one dish, topped with sour cream, quite healthy and delicious! Keep an eye on the rice to see it does not run dry. If you have too much moisture at the end, take the foil off and bake for additional 5-10 minutes.

Candy Bar Bars

Peanut butter + chocolate chips + sugary oatmeal you can't go wrong! This was great! Mine was a bit crumbley because I reduced the amount of brown sugar and corn syrup by about half. I also added about 1/2 cup ground flax seed for SOME nutrition. I added about 1Tbs. of cocoa powder to the "topping". Super good!

Boiled Bagels

I wish my stomach were bigger so I could wolf more of these bad boys down! Even when I left them under the broiler for 3 minutes (ooops) they were NOT burnt, the water must have remoisted them. Next time I will make the holes bigger, as they swelled shut during baking. The one deviation... I let mine rise for an hour fifteen, which made them extra puffy. SOOOO good! Thanks for a great recipe!

Peanut Butter Balls II

Too sweet! My hubby didn't think so... but next time I make these I will only put in 3 cups of sugar and WAY more (2 cups) peanut butter. It could stand to have more graham cracker crumbs, too. I was able to make ONE bag of choc. chips last the whole time, but I added a little cream and oil for a smoother texture. I think that those will affect the hardening capabilities of the chocolate... we'll see! Good, but next time only 3 cups sugar!!! It's got potential.

Almost Heaven Peanut Butter Cookies

These are great! They DO require some skill (and patience!) so I see why people have botched the recipe. You need to be careful when adding the water, very slowly, and do not overmix. Allow to cool for quite a while. They remind me of old-fashioned pie crust, with the pie included.

Baked Tofu Bites

I could not get these crispy. If you think they will be like cheesey-type poppers, they are not. They taste like hot tofu soaked in BBQ sauce. OK. Maybe better luck next time!

Buckwheat and Bacon Side Dish

The bacon is so good! Doesn't make a whole lot by our American standards, but this could be a main dish for 2 people. Careful about wolfing this down too fast... the buckwheat is SOOOO filling, you could get a tummy ache! Thanks for the great recipe!

Salsa Corn Chowder

I added 1 chicken breast (chopped), LOTS of spicy peppers, replaced half the corn with creamed corn, and the BEST addition was a can of black beans, rinsed/drained. Then I cooked it to smitherenes~ the husband and I polished it off in one lazy day of movie watching! WONDERFUL recipe, thanks!

Crustless Cranberry Pie

You wanna make this even more amazing? Singe the outside. Get your cast iron round pan really hot a greased up in the oven, then poor the batter in to bake it. The outside will be crispy and AMAZING!

Garbanzo Bean Chocolate Cake (Gluten Free!)

I am able to eat gluten, and still thought this was through the roof delicious. It's so simple, I've recommended it to 2 gluten-free friends. The only thing I did was add a little vanilla. The 2 teenagers from my church douldn't even tell anything was different about it!

Eggplant Au Gratin

SOOOO good! My hubby and I are trying to eat healthier, and this is a great way to start! I found the eggplant a little spongey for my liking, so the next day I microwaved the leftovers for a while to make them softer. It was a lot better after I over-cooked it. Next time I will leave it in the oven 10-15 mins. longer. Thanks for the recipe!!!!

I left out the leek, used sandwich ham, and got MEGA compliments! I took some advice and used half broth and half water, and still needed to add salt. If you like peas, this is SOOOO GOOD!

Summer Squash Casserole with Nuts

This was good, but it was an "interesting" texture. For the mayo I used Miracle Whip, sour cream and cream cheese... and it was just okay. Very tangy. My hubby surprisingly liked it! This also fills you up really nicely. Thanks for a good veggie dish!
