Strawberry Muffins

I made this recipe vegan (and thus changed it A LOT). The muffins were perfect!!! To make vegan: 1/2 cup SOYMILK + 1 teaspoon apple cider vinegar instead of milk, 1/4 cup SOY YOGURT instead of 1 egg, 1.5 cups CAKE FLOUR instead of 1.75 cups regular flour. Also, I added 3/4 teaspoon cinnamon and 1/8 teaspoon allspice, and greased the pan with cooking spray instead of paper liners. Bake for 20 minutes.

Microwave Lemon Curd

Here was my take on it: 1/2 cup sugar, 3 eggs, juice of 2 lemons, zest of 2 lemons, 9 tablespoons unsalted butter -----> PERFECTION!!!! This was my first attempt at lemon curd and with such success here I will ever even try another recipe.

Vegan Black Bean Soup

Beet Bundt Cake

This is a special recipe. It turns out moist and delicious with a very unique flavor. I went a little overboard with 6 beets - you could taste them in the cake so next time I'll use 4 or 5.

Chicken Pot Pie IX

This recipe sat in my recipe box for a while because I thought it would be really hard to make. But when I got around to it I realized it wasn't hard, and worth every second in prep time because the flavor is great and it keeps well too!! Like others I incorporated changes: added some potato, boiled veggies with a bayleaf, and added poultry seasoning to the sauce. The filling barely fits into the shell so measuring the veggies out was important. I didn't notice milk on the ingredients list and completely left it out by accident...still turned out a 5 star recipe!!!

Cherry Dump Pudding

I made this with 3 tablespoons butter, 1 1/3 cups sugar, 1 can of sour cherries, and juice from the can topped off with water to 1 cup. I also added a tiny pinch of allspice and cinammon and baked it in a casserole pan. It puffed up in the oven and I served it right away with ice cream, it was SOO GOOD!!!

Oatmeal Peanut Butter Cookies

I thought these were complex enough as is, so I didn't add chocolate or butterscotch as others have done. I cut back on the white sugar, using only 1/2 cup and was very pleased with the final product.

Pesto Sauce

Mango Cardamom Bread Pudding

WOW! This was so different than the average dessert and with the cardamom it had a very unique flavor. I upped the sugar to 1/2 cup and used a deep casserole dish but otherwise followed the recipe. Next time I will use just 1 t. cardamom since, as others mentioned, it is a strong presence.

Used recipe just as a general guideline. Instead of ranch dressing mix, used celery salt and a pinch of cayenne. Also reduced the amount of cream cheese. Used bell pepper, olives and yellow summer squash instead of celery. YUM YUM

Brown Sugar Meatloaf

Well just like everybody else, I made some changes. I'm certain they enhanced this recipe! I made sure to pre-soak the milk and saltine crackers. I chopped the onion very fine, beat the eggs, and mixed everything together rather than making the layers. Most importantly, I substituted an acidic, vinegar-containing bbq sauce (Prosser's brand) for ketchup. It tasted spectacular! Also I would recommend using nonfat milk and very lean beef, otherwise this is one fatty meal!
