Kathy's Baked Stuffed Tomatoes

Reviewed: Apr. 24, 2007
I made this recipe as-is. The flavor of the stuffed tomatoes was nice, but the texture wasn't right. After 20 minutes in the oven, the arugula filling was warmed, but not really cooked and the tomatoes got very watery. If I were to make this again, I'd cut the tomatoes in half before stuffing them and then bake them longer.

Strawberry Muffins

Reviewed: May 2, 2007
I made this recipe vegan (and thus changed it A LOT). The muffins were perfect!!! To make vegan: 1/2 cup SOYMILK + 1 teaspoon apple cider vinegar instead of milk, 1/4 cup SOY YOGURT instead of 1 egg, 1.5 cups CAKE FLOUR instead of 1.75 cups regular flour. Also, I added 3/4 teaspoon cinnamon and 1/8 teaspoon allspice, and greased the pan with cooking spray instead of paper liners. Bake for 20 minutes.

Cilantro Chutney Chicken

Reviewed: May 9, 2007
I'd never baked chicken in cream before, but found it a little odd because the fat separated from the water and formed 2 layers in the baking dish. When I'd finished, the flavor was okay - but too much work is required here for a mediocre end product.

Shepherd's Pie I

Reviewed: May 16, 2007
Fundamentally, it was a great recipe but I made the following changes: added garlic powder and Worchestershire sauce to the meat mixture, added a layer of canned corn between the potatoes and meat, topped with ketchup instead of cheese. Baked for 40 minutes at 375. The Shepherd's Pie was super!!!

Spicy Black Bean Cakes

Reviewed: May 21, 2007
Added 1 T. chili powder and 1 t. ground coriander. I'd also recommend microwaving the grated sweet potato. I made this twice, once substituting 1/4 cup soy yogurt for the egg - both ways turned out well. Wasn't crazy about the lime sour cream, instead I served with plain sour cream and salsa. Will definitely make again.

I left out the onion by accident. I also used whole wheat flour for extra fiber. Turned out great! Will make again!

Excellent recipe. I used morning star sausage links instead of bacon and it turned out great.

Best Brownies

Reviewed: Jul. 8, 2007
These are okay but nothing special, definitely "over rated." Usually brownies are made by melting chocolate squares with butter in a double broiler, not with cocoa powder.

Nany's Cheesy Cauliflower Casserole

Reviewed: Aug. 14, 2007
Thank you, I've been looking everywhere for a perfect cauliflower recipe and with a few changes this one came close: added 1T. curry powder to milk mixture to enhance flavor, baked it rather than broil. Furthermore, I made recipe even simpler by placing cauliflower UNCOOKED in a casserole dish, pouring the milk mixture over it and covering with tin foil. I baked it covered with foil for 35 minutes at 350 degrees F. Then removed the foil, spread the cracker/butter mixture over the top and baked for 30 more minutes. Voila!

Didn't have basil so I used oregano. Also added a little mozzarella and Trader Joe's chicken sausage. Very nice!

Dough is too sticky to roll but cookies turn out fine the "regular" way. Unique flavor.

Betsy's Mandarin Orange Salad

Recipe has way too much oil. Switch to 1/2 cup vinegar and 1/4 cup oil. Other than that, very nice.

Baked Ziti II

Reviewed: Oct. 24, 2007
I've made this several different ways now and found the following changes make the best results: 1) Slightly less than 16 oz of noodles - more like 14 or 15 oz. 2) Only 15 oz ricotta. 3) 28 oz crushed tomatoes + 15 oz tomato sauce with italian spices, onion powder and garlic powder for flavor. Otherwise follow as directed. Turns out so delicious and being so quick and easy it's sure to be a keeper!

Kay's Shortbread

Reviewed: Nov. 2, 2007
To make cookies from this recipe you have to lower the oven temp to 325F otherwise they burn. Also used 2/3 cup confectioners sugar, a few teaspoons water, and green tea emptied from tea bags. They were fantastic!!!

Easy and tastes amazing! For those people who live near Trader Joe's you can get cubed butternut squash there and avoid chopping up whole squash.
