Tomato and Basil Quiche

Nany's Cheesy Cauliflower Casserole

Thank you, I've been looking everywhere for a perfect cauliflower recipe and with a few changes this one came close: added 1T. curry powder to milk mixture to enhance flavor, baked it rather than broil. Furthermore, I made recipe even simpler by placing cauliflower UNCOOKED in a casserole dish, pouring the milk mixture over it and covering with tin foil. I baked it covered with foil for 35 minutes at 350 degrees F. Then removed the foil, spread the cracker/butter mixture over the top and baked for 30 more minutes. Voila!

Best Brownies

These are okay but nothing special, definitely "over rated." Usually brownies are made by melting chocolate squares with butter in a double broiler, not with cocoa powder.

Spicy Black Bean Cakes

Added 1 T. chili powder and 1 t. ground coriander. I'd also recommend microwaving the grated sweet potato. I made this twice, once substituting 1/4 cup soy yogurt for the egg - both ways turned out well. Wasn't crazy about the lime sour cream, instead I served with plain sour cream and salsa. Will definitely make again.

Shepherd's Pie I

Fundamentally, it was a great recipe but I made the following changes: added garlic powder and Worchestershire sauce to the meat mixture, added a layer of canned corn between the potatoes and meat, topped with ketchup instead of cheese. Baked for 40 minutes at 375. The Shepherd's Pie was super!!!

Cilantro Chutney Chicken

I'd never baked chicken in cream before, but found it a little odd because the fat separated from the water and formed 2 layers in the baking dish. When I'd finished, the flavor was okay - but too much work is required here for a mediocre end product.

Strawberry Muffins

I made this recipe vegan (and thus changed it A LOT). The muffins were perfect!!! To make vegan: 1/2 cup SOYMILK + 1 teaspoon apple cider vinegar instead of milk, 1/4 cup SOY YOGURT instead of 1 egg, 1.5 cups CAKE FLOUR instead of 1.75 cups regular flour. Also, I added 3/4 teaspoon cinnamon and 1/8 teaspoon allspice, and greased the pan with cooking spray instead of paper liners. Bake for 20 minutes.

I made this recipe as-is. The flavor of the stuffed tomatoes was nice, but the texture wasn't right. After 20 minutes in the oven, the arugula filling was warmed, but not really cooked and the tomatoes got very watery. If I were to make this again, I'd cut the tomatoes in half before stuffing them and then bake them longer.
