Artichoke Bruschetta

Reviewed: Jun. 14, 2008
I didn't make any changes. This was the best thing I have ever tasted.

Breaded, Fried, Softly Spiced Tofu

Reviewed: Jun. 1, 2008
Good but not amazing. You could sort of taste the flour. This recipe would be useful in preparing tofu for the tofu parmigiana recipe which is also on this site.

Pretty good. Better with fresh tomatoes than canned in my opinion.

Doctor Bird Cake

Reviewed: May 4, 2008
After all the great reviews I expected a great cake. Unfortunately mine came out really dry and boring. All you could taste were bananas even though I put in powdered ginger and allspice too. I even tried to doll it up with frosting (cream cheese frosting) and still didn't like it that much.

Tofu Salad

Reviewed: Apr. 25, 2008
I made two changes, one good one bad. I used Chinese sweet and sour sauce instead of the "sweet chili sauce" because I didn't know what that was. I liked that change. I also used canned peas rather than fresh and that was my mistake. They were a dull color and they were mushy. Next time I will use fresh, uncooked peas with this recipe.

I had to add water with the rice and also threw in about 1 t. cumin. Other than that followed to a "T" Tasty and healthy!!!

Brown Sugar Meatloaf

Reviewed: Mar. 15, 2008
Well just like everybody else, I made some changes. I'm certain they enhanced this recipe! I made sure to pre-soak the milk and saltine crackers. I chopped the onion very fine, beat the eggs, and mixed everything together rather than making the layers. Most importantly, I substituted an acidic, vinegar-containing bbq sauce (Prosser's brand) for ketchup. It tasted spectacular! Also I would recommend using nonfat milk and very lean beef, otherwise this is one fatty meal!

Mango Cardamom Bread Pudding

Reviewed: Mar. 15, 2008
WOW! This was so different than the average dessert and with the cardamom it had a very unique flavor. I upped the sugar to 1/2 cup and used a deep casserole dish but otherwise followed the recipe. Next time I will use just 1 t. cardamom since, as others mentioned, it is a strong presence.

Lentil Chili

Reviewed: Mar. 15, 2008
There is nothing horrible about this. It is just slightly bland and not as good as I expected based on its high rating and rave reviews.

Pesto Sauce

Reviewed: Mar. 10, 2008
The best pesto I've made and the first with walnuts. The flavor of walnuts is better suited to pesto than pine nuts in my opinion.

Nice recipe. I agree with the person who said this is dry without the glaze. Don't skip the glaze!!!!

Oatmeal Peanut Butter Cookies

Reviewed: Mar. 3, 2008
I thought these were complex enough as is, so I didn't add chocolate or butterscotch as others have done. I cut back on the white sugar, using only 1/2 cup and was very pleased with the final product.

Macadamia Nut Chocolate Chip Cookies

Reviewed: Feb. 19, 2008
I followed the recipe exactly, but the dough came out too gooey to form into balls. I had to add a lot of flour to the dough and it didn't taste good in the end. The cookies were just OK after baking.

I used instant coffee too and it worked fine, you just have to grind the granules through the seive when sifting and they turn into powder. Yummy!

Cherry Dump Pudding

Reviewed: Feb. 8, 2008
I made this with 3 tablespoons butter, 1 1/3 cups sugar, 1 can of sour cherries, and juice from the can topped off with water to 1 cup. I also added a tiny pinch of allspice and cinammon and baked it in a casserole pan. It puffed up in the oven and I served it right away with ice cream, it was SOO GOOD!!!

Chicken Pot Pie IX

Reviewed: Feb. 8, 2008
This recipe sat in my recipe box for a while because I thought it would be really hard to make. But when I got around to it I realized it wasn't hard, and worth every second in prep time because the flavor is great and it keeps well too!! Like others I incorporated changes: added some potato, boiled veggies with a bayleaf, and added poultry seasoning to the sauce. The filling barely fits into the shell so measuring the veggies out was important. I didn't notice milk on the ingredients list and completely left it out by accident...still turned out a 5 star recipe!!!

Spaghetti Squash I

Reviewed: Jan. 22, 2008
I baked the squash whole but next time I'll halve it and bake in 1/4" water because it comes out less crunchy that way. Used cherry tomatoes, kalamata olives, red onion, and extra garlic. YUM YUM!!!

This tasted pretty good but I agree with others: it is spicy, pretty sweet and has too many raisins.
