Weird flavor! Mushy. Not my favorite.

Microwave Lemon Curd

Reviewed: Mar. 5, 2012
Here was my take on it: 1/2 cup sugar, 3 eggs, juice of 2 lemons, zest of 2 lemons, 9 tablespoons unsalted butter -----> PERFECTION!!!! This was my first attempt at lemon curd and with such success here I will ever even try another recipe.

Strawberry Cream Roll

Reviewed: Jul. 24, 2011
Don't try to stir the fruit in with the cream or it gets mushy. Just place the fruit on top of the cream before rolling. Other than that, amazing recipe! I used nectarines, grapes and raspberries. You could use almost any fruit and it would be delicious!!

Stuffed Peppers with Turkey and Vegetables

Reviewed: Apr. 10, 2011
I am going against the grain again to say this recipe does NOT deserve its almost perfect rating!!!! It is not that excellent. The flavor was ok. The texture was off (too watery) and the peppers tasted raw. I gave it 2 stars because it was edible and healthy.

Cajun Baked Catfish

Reviewed: Sep. 23, 2010
Oh my goodness, this disappointing! I had really high hopes! 1) catfish is fatty and flavor is not good 2) the marinade is oily too 3) thyme was all you could taste 4) it took much longer than this to bake so it wasn't completely raw or dangerous to eat, I would tack on another 20-30 minutes to what the recipe says.

Party Pinwheels

Reviewed: Jun. 13, 2010
Used recipe just as a general guideline. Instead of ranch dressing mix, used celery salt and a pinch of cayenne. Also reduced the amount of cream cheese. Used bell pepper, olives and yellow summer squash instead of celery. YUM YUM

Easy Granola Bars

To make healthier use golden raisins instead of chocolate chips - still tastes great and won't melt in the heat of summer!!!

You should definitely use mozzarella and not Gouda, the Gouda did not melt down at all.

Emerald Green Risotto

Reviewed: Apr. 19, 2009
Loved it!!! Be careful - don't add the veggies too soon - they will lose their emerald color and soggy and unappetizing.

J.P.'s Big Daddy Biscuits

Reviewed: Jan. 2, 2009
In my hands the best recipe for baking powder biscuits is this one: 2 c. flour, 2 t. baking powder, 1 t. baking soda, 1/2 t. salt, 5 T. butter, 2/3 to 3/4 c. milk. I do everything else the same. It is similar to JP's biscuits, but doesn't have sugar.

Andrea's Pasta Fagioli

Reviewed: Jan. 2, 2009
Fabulous!! I used 1/2 lb elbow pasta and am glad I did that because 1 lb would be too much. I also cut off a piece parmesan rind and boiled it with the soup. I did not boil the grated cheese with the soup, but rather added it last after turning off the burner.

I used 2 cups Bisquick (the new heart healthy kind) instead of flour and corn meal. Pretty good.

Sweet Potato Carrot Crisp

Reviewed: Oct. 14, 2008
Based on what I had on hand I used 6 sweet potatoes, 1 lb baby carrots 5 garlic cloves, and skipped the honey. Then I doubled the amount of topping to 1.5 cups breadcrumbs, 1/2 cup pecans, 3 T. butter, and 4 T. parsley. Also I steamed the carrots and sweet potato rather than frying.

Zucchini Brownies

Reviewed: Sep. 3, 2008
Was a very odd recipe. Not very sweet and a little rubbery. I went without frosting - but it is probably better with frosting. Also, I chopped the zucchini in my food processor and could still see tiny green particles in there in the brownies. Not all that appetizing.

Sesame Seed Veggie Salad

Reviewed: Jun. 14, 2008
When I opened the can of black eyed peas I immediately found the scent of them quite strong and not that pleasant. I went ahead and put them in the salad anyway, as the recipe says, and let it marinate overnight. After marinating it tasted alright, but I could still detect a trace of the black eyed peas flavor and smell which put me off. Since there are so many other good salad recipes on allrcipes I will not be making this again.
