Southern Potato Salad
Doubled recipe for a crowd, using 6-8 med sized russets (peeled/cut/boiled until tender 10min). 3 stalks celery, 1/3 cup diced dill pickles, 2 Tbl diced sweet onions. Made sauce in two batches, with mods: + 1Tbl cider vinegar scant, + 1 tsp sugar, using 1 T mustard. First batch, splash of dill pickle juice. Mix in batch one with veggies, then fold in potatoes. Mix in second batch of sauce, with eye on consistency. Add in chopped eggs. Chill, keep remainder of any sauce to fold in, if salad is a little dry when time to serve.

My Grandmother's French Dressing
Fantastic French dressing! This tastes amazing, and is super easy to make. Add the sugar last, so you can adjust based on your tastes. I used about 1/2 the called for amount. As previous reviewers state, this recipe makes a large portion. We scaled it down to 3 servings, and it was perfect for a dinner party of 6. Also added a few dashes of Wostershire sauce, and left out blue cheese. Delicious!

Tex-Mex Quinoa Salad
Super delicious, and vegan friendly w/changes. No cheese, no canned tomatoes/garbanzos. Added: fresh tomatoes, 1tsp diced jalapeno, 1/2 can black beans (drained/rinsed), 1/2c chopped fresh spinach. Doubled lime juice, and added 1 clove minced garlic.
