Coconut Shrimp I

These shrimp turned out wonderful. I actually coated them and put them on a cookie sheet in the freezer, then put them in zip lock bag. Fried them up 2 days later for a party and everyone loved them. By themselves i would maybe add a little bit of sugar to the flour because i like them to be a little sweeter (even though i used sweetened coconut), However when served with the orange marmalade/horseradish/mustard mixture they were EXCELLENT!

Cream Puffs

The shell turned out wonderful... 5 Stars.. Very easy to make and held up well. Just make sure you poke a hole on the side after baking to release steam. The filling was just ok. Nice consistency, but I didnt like the processed pudding taste. Good if you are in a rush, but think i will try to make a filling from scratch next time or maybe reduce the amount of pudding and add vanilla extract.

Mini Cheesecakes

These tasted great! Very simple but great cheesecake taste. Next time I make a large cheesecake I will use this recipe to replace the one I currently use. Also loved the vanilla cookies crumbs on bottom instead of graham cracker crumbs.

Apple Squares

I followed the recipe almost exactly, except I added 1 cup of apples. When they first came out of the oven, I wasn't to crazy about them. But once they were room temperature, they tasted wonderful. I even put a few in the fridge and think they tasted even better the next day cold! They were very soft and chewy. Tasted almost like a mixture between an apple crumb cake and a brownie. Will definetly make again. Thanks for the recipe.

Chicken Breasts with Balsamic Vinegar and Garlic

This is such an easy recipe... but so delicious. I followed the recipe exactly, except omitted the bay leaf because I didn't have any in the house. Also, I like my sauce to be just a little thicker, so i added a little extra flour and allowed to cook for an extra 5-10 min until the sauce coated the back of a spoon. Served with mashed potatos. Everyone loved it.

Chocolate Truffle Cookies

So Good! I brought them to a family get together and every one LOVED them! You really have to be careful not to overbake. The cookie will still taste good, but it won't have that soft velvety truffle texture in the center. MMMM... can't wait to make these again.

Peanut Butter Cup Cookies

I didn't have a mini muffin tin handy, so i just made these into little balls and put them on a baking sheet. They spread out a bit, but i was still able to put the peanut butter cup in. Everyone I served these to really enjoyed them, but I wasn't crazy about them. A little to oily and peanut buttery. You can really only eat one or two.

Baked Kale Chips

Very good! They taste almost like a rustic potato chip. Not exactly, but close enough. Especially when on a diet! Thanks for a great recipe that im sure to repeat over and over again.

Black Bean Brownies

Very Tasty! Taste is a little more cakey then traditional brownies.. but still very good! cannot taste the beans! I used organic unrefined coconut oil and omitted chocolate chips. Will definetly make again.

Yummy Honey Mustard Dipping Sauce

This was very good served along side chicken fingers. I made a few substitutions though. I dont like yellow mustard, so i used 1 tablespoon spicy brown mustard instead with 2 tablespoons dijon mustard. Otherwise i followed the recipe exactly and it came out delicious.

Southwestern Egg Rolls

I made a triple batch of this recipe for a party.. SOOO GOOD! nothing but compliments.. and everyone said this was the best version they have ever tasted. I also omitted spinach, and used egg roll wrappers instead of tortillas. I fried all of them 2 days before party, wrapped them in plastic wrap, placed in fridge and reheated at 425 degrees for 10-12 min. Not as crispy as when they are first fried.. but not soggy either. I served this with ranch dip that i added chili powder to. Next time I will try baking to make them a bit healthier. Thanks for a wonderful recipe that I will definetly be making over and over and over again!

Marinated Flank Steak

Perfect! I used skirt steak because i couldnt' find flank steak, and marinated for 24 hrs. The best fajitas I have EVER had. Everyone I served them to said the same.

very good. I think next time i will marinate the chicken overnight for even more flavor. I doubled the sauce, so that i had enough for basting. Next time i think i might even triple the sauce and serve some over the finished kebob, maybe over rice.

Decadent Raspberry Brownies

The actualy brownie was delicious. I didnt give this recipe 5 stars because I wasn't a fan of the cream/chocolate topping. I had three other people try them, and we all agreed that they would taste better without it. I am going to try to make the same brownie but with raspberry jam swirled through instead of on top, and will omit the cream topping. Otherwise a great brownie recipe!

Sugar Cookie Frosting

Great Icing. Was smooth enough to apply, but firm enough to hold its shape. Was very easy to pipe intricate designs. I was able to stack the cookies I made about 20 minutes after frosting but the frosting stayed soft enough so that they were enjoyable to eat. I am going to continue trying icing recipes out because i sometimes prefer glossy finishes, but I will definetly keep this one on record as an easy, go to recipe.

Oatmeal Whoopie Pies

The cookie itself tasted very good. I am giving this only 3 stars because i felt that the cookies were a little too hard. I thought they would be softer. Maybe i will try to undercook them next time to get them chewier. Also i wasn't too excited about the filling. Too sweet and wasnt too crazy about eating shortening. Will try again, with some adjustments. But not a bad start.
