Laurie's Shepherd's Pie

I love this for those quick fix one dish meals. Although I do serve with a salad occasionally. I alter the vegetables to whatever is in my kitchen at the time. Pinto beans, grean beans corn white beans carrots etc. Its always a great hit and very filling.

Mango Tango Black Bean Salsa

FANTASTIC. I take this to many many summer outings and after coaxing a few the "picky" to at least taste it, I win everyone over. Have not had one person not like it and there are never any left overs. Occasionally my mangos aren't ripe enough and somewhat bitter so I sprinkle with sugar and toss in the microwave to soften. YUM YUM YUM

Flatlander Chili

This is a GREAT chili. I recently made it for my father-in-law and won him over. Believe me this is no easy accomplishment. I season to taste frequently adding more cayenne pepper and cumin and less chili powder. For a different variation and real tomato taste I add a large can of diced tomatoes.I simmered for a few hours until my guests arrived and it was the perfect consistency.

Praline Cake

Reviewed: Jan. 19, 2008
I made this cake also cutting 10 minutes off the baking time. I substituted 1/3 c Peach Schnapps for some of the water called for in the cake directions. It was wonderful. Just a hint of peach with the caramel flavor of the frosting did the trick. Awesome recipe and very easy.

Aileen's Punch

Reviewed: Apr. 28, 2007
Not only was this punch a huge success at my wedding, it is becoming increasingly popular within my family and friends. My aunt & uncle are having their 50th wedding anniversary and requested I make "THE punch". Simple light yet refreshing. I did make an ice ring using juice and colorful fruits which helps keep the drink cold yet not watered down. This is definately a winner.
