Airport Bob's Green Beans

The last laugh is on me....I just fixed these on a whim because I had everything on hand and trying to use up part of a bag of frozen green beans. Actually, I thought the recipe sounded rather "icky" but was I ever WRONG ! These are the BEST !! Usually I go for lemony flavors on veggies, etc., but Airport Bob's Green Beans are OUT OF THIS WORLD ! I used peppered bacon. I've already shared the recipe with two other foodies. SCRUMPTIOUS !

Campbell's® Easy Chicken and Cheese Enchiladas

This was good but pretty bland. I followed the recipe exactly with the exception of using a MEDIUM salsa. Next time I'm going to use the Southwest Pepperjack soup from Campbell's. Perhaps that will take it up a notch. Topping it with grated cheese didn't do too terribly much, flavorwise. I know the chicken enchiladas shouldn't be as zippy as beef but this was awfully tame. Simple, and as another reviewer mentioned, I too made mine in the morning for putting in the oven later in the day.

Limoncello

Try mixing this with Italian Blood Orange Soda for a gorgeous as well as over the top cocktail ! I get my soda at Target but many grocery stores have it. Put the Limoncello in a tall glass over ice cubes and then slowly pour the soda, which is a dark red orange color, down the side of the glass. Beautiful color combo as well as flavor....ENJOY !

Savory Garlic Marinated Steaks

This is a keeper. I felt cutting the recipe in half provided ample marinade and I even tossed 8 oz of whole mushrooms in the plastic bag along with the steak. Then sauteed them in butter while steak cooked on the grill. YUMMOOO !!

Pork Tenderloin with Mustard Sauce

The marinade was nice but not quite as potent as I anticipated, however, the sauce was such a pleasant addition and so simple to make. Takes only a few seconds to whip up and then let the flavors mellow for as long as possible in the fridge. Everything is always on hand. I added a few chives for a little color and leftover sauce is good for a sandwich spread instead of mayo. Certainly a keeper recipe and how nice to add the sauce for what is otherwise a rather blah looking cut of meat. Gives it a little extra ZING !

Garlic and Herb Cream Cheese

We thought this was exceptionally good and as others did, I cut the butter in half and next time I'll cut the garlic in half. We are garlic lovers but felt this was a little heavy-handed. I diced up a bit of sundried tomatoes in it, too, for color. Overall, it certainly is a keeper and as others have said, stuff always on hand and cheepo ! Makes a handy little quickie gift for someone who unexpectedly brings you a little something. Just put in a pretty little container and keep in fridge til needed.

Teena's Spicy Pesto Chicken and Pasta

Not quite what I was anticipating and we kept saying, "What is this missing ?" Finally determined perhaps shrimp and a little sun-dried tomato would offer a little flavor burst. Not a goat cheese fan, but I'll bet that would add something as well. Thanks for sharing, Teena. :-)
