Spicy Indian Chicken and Mango Curry
Best Curry I've made yet. I did not find it spicy enough so I doubled the curry paste and added a few hot dried peppers. My mangos were not ripe even after sitting for a week in my house, so I pureed 1 with a cup of fresh pineapple and the milk to help sweeten/flavor it. I didn't have shallots so I used 5 scallions which ar much less potent. I was surprised how well the cucumber went with the dish and added a few cashews to garnish also. Overall good curry served over rice.

Pumpkin Roll Cake
Easily made roll. My cake didn't fall apart at all. I used a Silpat to line my pan (could try parchment paper too) so it was easy to get out and invert. I had to be careful pulling it off the cake so this could be a tough recipe without a liner! I didn't have any problem with it sticking to the towel but I was generous with the amount of powdered sugar I sprinkled on it. I will definitely do this recipe again, but I have a better cream cheese frosting that I will try instead. This one is good but I am going for a knock out.

Zucchini Brownies
Surprisingly moist since batter was so dry. Doesn't need an egg so I was skeptical but they turned out even though mine fell apart a little. I did add 1 cup chocolate chips instead of nuts. They were not as sweet themselves as I expected but the frosting alleviates that. A great recipe for zucchini! Unlike some breads you will not know there is any in this!
