Best Tuna Melt (New Jersey Diner Style)

Okay, I'm not a huge rye bread fan, so I substited sourdough. Other than that, I followed the recipe exactly and my tuna melts turned out amazing. I have made them several times now, and they are sooo good.

Reuben Sandwich II

My husband is a Reuben snob, and he loves this recipe. I make them with our corned beef left over from St. Patrick's Day. My tips are to make sure you use high quality sauerkraut, and cook the sandwiches on LOW for 15 minutes on each side. That way they are hot all the way through, but not burned.

Toddler Muffins

A snack with vegetables and fruit that my 2 and 4 year old beg for?! Amazing! I am so happy that I found this recipe. I followed the recipe exacly as written, and they were delicious. I might try replacing some of the butter with applesauce to make them even healthier.

Chicken Pot Pie IX

A great recipe, with a few changes. After reading other reviews, I doubled the amount of sauce, baked the empty for 5 minutes before filling it, and added some poultry seasoning and garlic powder to the sauce. I baked it in my convection oven, so it only needed to bake for 19 minutes. I will definitely make this again. Next time I want to try making individual pies in ramekins, as another reviewer did.

Cindy's Really Good Au Gratin Potatoes

Like previous reviewers suggested, I doubled the sauce, and I agree it's a must. I also replaced 1/2 the cracker crumbs with garlic & herb bread crumbs to give it a little kick. They turned out amazingly good!

Tilapia Soft Tacos with Chipotle Cream

My picky DH and I both loved the flavor of the fish--very flavorful and a bit spicy. I especially liked that I didn't have to marinate the fish, so I don't have to plan ahead to make them. To make them more authentic, we used white corn tortillas and shredded cabbage. We also topped them with queso fresco and chopped tomatoes. Yum! I will definitely make these again.

Banana Banana Bread

This recipe makes the best banana bread I've ever tasted, and I'm very picky about my baked goods! I've had several friends and family ask for the recipe, and it's now a fixture at every Christmas brunch.

Delicious Ham and Potato Soup

Made this for dinner tonight, and even my picky husband liked it. I followed the recipe exactly, and it turned out wonderfully. Nice creamy consistancy and great flavor. Will definitely make again.

Microwave Corn Chowder

I just finished making this recipe, and find the consistency to be great, but the flavor is a bit bland. I followed the recipe exactly, except that I reduced the cooking times by about half because my microwave is more powerful than 850 watts. I think next time I'll try using chicken stock instead of water, and experiment with some additional herbs/spices.
