These were sooo good! And really easy. The only things I did differently was 1/2 cup of brown sugar in place of 1/2 cup white sugar, 2.5 tsp pumpkin pie spice in place of the cinnamon, nutmeg and cloves, and used 18% table cream in the icing instead of milk. I was contemplating making cream cheese icing but the icing in the recipe was perfect, so glad I didn't!
You have to smooth out the batter because all the peaks will stay. I found wetting my fingers with cold water and smoothing them out worked better than a spoon.
I brought them to a potluck and people who don't usually like pumpkin-flavoured things liked these.
