Glorious Sponge Cake

I used vanilla extract instead of lemon extract and my cake came out fine. I also only needed to keep it in the oven for 40 minutes. Next time, I'll spray the cake with simple syrup to give it some moisture.

Caramelized Baked Chicken

Fluffy Pancakes

These pancakes poofed up alright, but they were too dense for my liking. A good recipe, but I think it needs more tweaking for it to be perfect.

Beignets

I was looking for the recipe from The Jazz Kitchen in Downtown Disney and noticed this recipe is very similar to the one posted on The Jazz Kitchen's website. My beignets didn't come out as fluffy or as soft as the one in DTD, but it was still good. Next time, I'm going to add a bit of vanilla (like others have suggested) and 1 more tbs of evaporated milk because my dough came out a little hard and dry. Maybe it's because I used my kitchen aid mixer to blend all the ingredients together...hand mixing dough always comes out with better results. Also, please note that this recipe is massive, even when I halved it. I need suggestions as to what to do with the extra dough!

Fresh Southern Peach Cobbler

Like other reviewers said, the sugar in the filling needs to be reduced and the topping needs to be doubled (I used an 8 x 8 pan). I didn't use all of the cinnamon sugar mixture and I baked the topping for 18 - 20 minutes. Other than that, this is a great recipe.

Banana Crumb Muffins

I took other reviewers suggestions and added 1 tsp vanilla, 1/2 tsp nutmeg and 3/4 tsp cinnamon to the muffin batter, but I think next time, I'll skip out on the spices or reduce the amount since it came out a little too spicy for me. I also added an extra banana for more flavor and substituted canola oil for the butter. The muffins came out moist and fluffy. Great recipe!

Cinnamon Griddle Cakes
