Zucchini Pineapple Loaf

Wonderful - I had fresh pineapple on hand, so I ground it up to create the "crushed" effect. The loaf didn't last long at all, with toddlers and a hungry husband in the house. Excellent recipe!

Fast, easy, and delicious. I would recommend getting the firmest tofu you can and stir-frying it a few minutes before you add the garlic so it takes on a firmer, more "fried" texture and is not too squishy. Also, I found that after I cooked the frozen veggies, I had quite a bit of liquid left over, so I added some cornstarch water and let it set a few minutes after I turned off the heat. This made a delicious sauce when it thickened up a bit. I also used a little more oyster sauce.

Pumpkin Gingerbread

Yum! My family loves this recipe, especially my finicky toddler. It makes two loaves, so we are good to go for about a week and my daughter wants to eat nothing but this moist, delicious bread. Perfect combination of spices and so easy to make. This has become a family favorite.

Crunchy Oven Fried Tilapia

This recipe has a great texture and is super-easy as well as heart healthy. I gave it four stars instead of five because I felt it was a little bland. I will make this again, but next time I will add more seasoning to both the flour mixture and the cornmeal mixture. Maybe some cajun spice or seasoned salt. It just needs a little more "bam!"

Gingerbread Biscotti

These were the perfect treat to have with coffee on a cold winter day. It was a surprisingly easy recipe. I did end up using 1/3 c. more flour to make the dough easier to handle and I used white, not whole wheat flour because that's all I had on-hand. I dipped one side in white chocolate, which makes for a prettier presentation. I received many compliments on these and plan to make them again.

Wheat Germ Whole-Wheat Buttermilk Pancakes

These pancakes have a very hearty, healthy taste to them. My picky two-year-old ate three of them. That is the ultimate compliment! I did not have buttermilk, so I added some lemon juice to regular milk and it worked just fine. Also used regular whole wheat flour. These are great with a little butter and honey.

Absolutely Excellent Oatmeal Cookies

I was not impressed by this recipe - the taste was rather bland and I didn't like the consistency of the cookie - it was more cake-like and puffy, while I was looking for something flatter.
