Caramel Frosting IV

Mmmm this frosting is delicious! I just made it today and have to keep myself from eating it by the spoonful before I frost my cake! I followed the directions exactly and it came out perfect. Thanks for the great recipe!

Easy Mint Chocolate Chip Ice Cream

Yum yum yum!!!! I made this last night after visiting an ice cream shop that was closed. It definitely satisfied my craving! Best of all, it was amazingly easy! Next time I might use a little bit less mint extract. It was on the border of being overpowering, but was still delicious!

Beth's Spicy Oatmeal Raisin Cookies

By far the best oatmeal raisin cookies I have ever had! They are soft and chewy, and have the most wonderful flavor! The cinnamon and cloves do wonders for this cookie! I used all butter instead of half butter and half butter flavored shortening just because butter flavored shortening gives me the creeps! These are delicious cookies!

Pecan Pie V

This was by far the best pecan pie I have had to this day! I will echo many reviews by saying that the lack of corn syrup keeps this pie from becoming sickingly sweet. My mother-in-law said that she normally thinks pecan pies are a waste of perfectly good pecans, but this pie breaks the norm.

Award Winning Soft Chocolate Chip Cookies

These are very delicious cookies! I just made them yesterday for the first time. I like soft cookies, but I don't like them to be cakey. This recipe nailed it. Definitely the best chocolate chip cookies I have made thus far!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I have been stuck in a rut of oatmeal and a smoothie for breakfast for ever! I thought it was the easiest and healthiest thing to make in the morning. After finally finishing off a box of whole wheat pancake mix, which was ok, I decided to find a recipe for whole wheat pancakes. These are amazingly easy and way better than the box mix. These will definitely become a breakfast regular.

German Chocolate Cake Frosting II

With an added tablespoon of cornstarch, this recipe was delicious! It made just enough to frost the top and in between layers of a 9 inch round cake. Then, I used chocolate frosting to frost the sides and decorate.

German Sweet Chocolate Cake I

This cake was absolutely delicious! I followed the directions exactly, but baked it in two 9 inch round cake pans and had enough batter left to make 3 cupcakes. After everything was done baking I decided that it would have been fine to put all the batter in the 9 inch pans. I used the number one rated german chocolate cake frosting and followed the directions exactly. This cake was better than any I had ever bought!

Raspberry Swirls

These turned out great! I followed the recipe exactly, except I didn't add coconut or lemon extract because I didn't have it. I was worried when I first rolled up the dough with the jam in it because the dough seemed too stiff and crumbly, but I froze the dough before I sliced it and the cookies turned out great. I baked them on parchment paper that I sprayed with non-stick cooking spray and that worked out great.

Pineapple Chicken Tenders

I was looking for a new chicken recipe and this one did the trick. My husband and I really liked it. I marinated the chicken for about an hour, but next time I will tenderize it and marinate for two hours to give it more flavor. I will also reserve some of the marinade to pour over the chicken as it finishes cooking. I made it on the stove top on a griddle and it worked well. It took about 6 minutes on each side over medium-high heat.

Pumpkin Waffles with Apple Cider Syrup

This is the second time I've made pumpkin waffles. This recipe is much better than the first recipe I tried. I used half whole wheat flour and half all-purpose flour. I added another 1/2 cup pumpkin and reduced the milk by 1/2 cup to compensate for the added moisture. I also left out the ginger just because I didn't have any. I also added an extra teaspoon of cinnamon and an extra 1/2 teaspoon of allspice. These were amazing! The recipe for the syrup made just the right amount for the waffles. I will definitely be making these often!

BREAKSTONE'S Sour Cream Scalloped Potatoes

I used russet potatos, light sour cream, and about 2 cups of shredded cheddar cheese instead of velveeta. I kept the green onions and parmesan cheese as the recipe said. They were pretty good, definitely worth making over and over.

Chocolate Covered Caramel Surprise Cookies

A hit at the ladies cookie exchange during the holiday season! Also a hit year-round. I've made them with mini reeses, rolos, and junior mints in the middle. I made these for my roommates when I first moved in and one exclaimed, "dang girl, you sure can bake a cookie!"

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

This recipe was delicious. I substituted more applesauce for the vegetable oil and doubled the cinnamon. I would definitely reccommend using fresh strawberries. The last few muffins went bad because the strawberries made them a little more soggy even though they remained frozen until they were baked.

Pesto Chicken Florentine

Pretty delicious, and very easy! I agree with everyone that you should at least double the spinach. I also added about 5 tablespoons of pesto instead of 3 and used alfredo sauce from a jar.
