Pistachio Crusted Chicken

Reviewed: May 31, 2007
This recipe was pretty good. It definitely needed the raspberry sauce-I used a raspberry barbeque sauce from this website.

I liked this recipe alot. I steamed the broccoli over chicken broth after it marinated for 2 hours. It was very tasty.

This recipe came out a bit bland. I probably won't be making it again.

Chicken and Sausage with Bowties

Reviewed: Jun. 12, 2007
I followed the suggestions of some of the other reviews, and added some ff half and half instead of cream, some broccoli, spinach and porcini mushrooms. It was flavorful, but the sauce wasn't very thick. I might try this again and simmer for longer. I also added some cornstarch-next time I will use more.

I use this to flavor everything. Chicken salad, home made bread crumbs, any savory dish. I gives simple flavor that is never overwhelming!!!!

Italian Pasta Florentine

Reviewed: Jun. 25, 2007
This recipe was easy, fast, and delicious. I substituted multi grain rotini for the egg noodles, and used sundried tomatoe flavored chicken sausage instead of italian sausage. I also added about 1/3 cup ff half and half, 1/2 cup parmesan cheese, and lots of freshly ground black pepper to the sausage and garlic for the last minute or 2. This gave more of a sauce to the pasta. The sausage definitely makes this dish!

Mama's Potato Salad

Reviewed: Jul. 2, 2007
I love potato salad and this recipe is a keeper!! I used red potatoes and dijon mustard because that is what I had in the house, and it came out great! I will continue making my other recipe for potato salad also, but this is definitely staying in my recipe box for future use. :-)

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jul. 2, 2007
I followed the advice of a previous review and tried this recipe with fish. I used salmon instead of tilapia, and dried basil-all I had in the house. It was very good. I also used a recipe from this website Mama's Balsamic Vinaigrette to marinate. It was awesome! I can't wait to try it with chicken also.

Mama's Balsamic Vinaigrette

I did find this to be a bit heavy on the vinegar flavor... but still thought it was good. I will try a better quality vinegar next time.

Garlic Pasta

Reviewed: Oct. 1, 2007
I altered this recipe greatly, but wow! I used dried herbs-all I had in the house. I also used whole wheat egg noodles, adding a package of frozen chopped broccoli when the pasta was almost done. I took another reviewers advice and added some butter to the sauce, adding more garlic at the same time. To the cooked pasta mixture I added some cooked salmon which I had used the same herbs on-baking the salmon until it was well done with some olive oil and the herbs. Definitely will make again!

Venison Pot Roast

Reviewed: Oct. 7, 2007
This was my first time making venison, and it came out AWESOME!! I had a friend over for dinner who had never tried venison before, and we both loved it. I made no changes to the recipe, maybe next time I will not use potatoes, I prefer egg noodles with my pot roast.

Chicken with Garlic, Basil, and Parsley

Reviewed: Oct. 7, 2007
I liked this recipe, but it was a little spicy for me. I sprinkled balsamic vinegar on top of it all, like someone else suggested, but probably won't do that again. I will probably cut down on the red pepper next time also.

Chicken Breasts with Herb Basting Sauce

Reviewed: Nov. 5, 2007
This was a great meal!!! I substituted boneless, skinless chicken breasts because it was what I had on hand. I also increased the garlic to 1 tbsp of jarred minced garlic, and diced the onion instead of mincing. I spread 1/2 of the seasoning mixture on the bottom of my baking dish and added a little extra olive oil also. Then I spooned the rest of the mixture on top of the chicken. I baked for 30 minutes at 425 as another reviewer suggested. This recipe was juicy and flavorful. It is a great recipe for a quick meal!! I will DEFINITELY make this again and again!

Marinated Baked Pork Chops

Reviewed: Dec. 3, 2007
I followed the advice of several other reviewers, and altered the recipe in several ways. First, I marinated the chops for several hours before putting them in the oven. I also only used 2 chops, but the whole recipe of marinade. Next, I added some diced onion, approx 1 sm onion, and covered the dish with aluminum foil. Then I baked it for 30 mins on 350. Then I removed the foil and spooned the marinade over the chops. I baked it around 10 more mins at 450. I served it with rice, broccoli, and apple sauce. It was a great meal!!

Delicious Apple Sauce

Reviewed: Dec. 3, 2007
This was easy to make, much easier than I would have thought!! I altered it slightly. I cut the sugar down to 1/2 tsp, and I still think it was a little sweet. I used macintosh apples, what I had on hand-plus they are my favorites!!! So I was expecting a tarter sauce. Next time I will leave the sugar out altogether. I also decided to increase the water, and raised the heat to high. It made the apples cook very quickly. Then when the apples were tender, I drained them. Then I put the whole thing in the food processor and added a little more cinnamon. ********1/15/08 I just made this recipe again to use in an applesauce cake. I omitted the cinnamon and sugar completely, and added strawberries when I simmered the apples-used Red Delicious this time. It has a great natural sweetness to it. This is a great recipe to play with if you like applesauce!

Italian Peas

Reviewed: Dec. 13, 2007
Very quick and easy. I don't usually like peas, but this is a great way to use them. I made as a side dish with Chicken Scampi II from this site. I can definitely see myself making this again.

Chicken Scampi II

Reviewed: Dec. 13, 2007
This is a great recipe! I made it exactly as the recipe was written, and it came out wonderful. I served it over spaghetti, and added Italian Peas, from this site, as a side dish. The only thing I did differently was to put some grated Parmesan cheese over the top.

Applesauce Cake IV

Reviewed: Jan. 15, 2008
This recipe was good. However, the cloves WERE a bit strong. I forgot to add the salt, but it still came out well. I used parchment paper on the bottom of the pan, instead of greasing and flouring. This helps to get the cake out of the pan MUCH more easily. Not my favorite applesauce cake, so I will keep looking... but a pretty good recipe.
