About this Cook
I started cooking so that I would be able to control what I put in my diet. I prefer to make things from scratch, and I love to learn new things-especially about cooking!!! I feel that each time I try a new recipe, I learn something valuable. I have started to get a feel for the adjustments to make, even the first time I try something. Any and all input is always appreciated!!! :-)
My favorite things to cook
I usually lean towards Italian, or hearty foods-like pot roast or meatloaf. I love to try new things, and experiment quite a bit.

Asiago Toasted Cheese Puffs
These were a huge with with my family at Easter! I followed the recipe with a few changes. I used Italian bread sliced in half. I also broiled the bread first to toast it, then I spread the cheese mixture on and broiled until they were brown and bubbly. Def will make again!!

Artichoke and Spinach Swirls
I made this recipe when I met my boyfriend's family at a Christmas Eve party. I followed the suggestion to substitute sour cream for the mayo, and I used a full cup of the sour cream. I also used Pillsbury crescent rolls cut in half and rolled into mini crescents stuffed with the dip. They were a hit!!

Broccoli Chicken Fettuccini Alfredo
This is a great quick recipe. I will def make again!! I did change a few things though, some on purpose & some because it is what I had handy. I sauteed approx 4 cloves of minced garlic, salt & pepper before adding the chicken. I also increased the amount of broccoli to 3-4 cups, and substituted cream of chicken for the cream of mushroom-it is what was in the house. I also used a mixture of fresh asiago cheese, and canned parmesan-also what I had on hand. My brother and father both said it was a good dinner. Not low-fat, but I will make this again.
