The Best Bean and Ham Soup

I didn't have the vegetable juice or broth, so I added a quart of tomatoes and 10 cup of chicken broth... It was amazing! Best Ham and Bean soup I've ever made! Great recipe!

Mom's Zucchini Bread

This was a fantastic recipe! Moist and perfect! I made it as is except one minor change - I used cooking spray instead of grease for the pan - it didn't stick! Thanks!

As other reviewers said, it's a lot of work, but it is worth it in the end! I suck at roux, so I made a paste of cornstarch and water and added it to my hot milk...then I added a bit of butter. For the eggplant, I sprayed some olive oil on it and let it brown on both sides instead of frying it in oil. We salted it and rinsed it before. We also used lean meat to cut down on the grease. It was great and I'm sure it'll be even better tomorrow!

Green Bean Stir-Fry

Although upon looking at the recipe initially it seemed a bit odd, we tried it. It was great! I would recommend making the grean beans a bit smaller - halving them - so they cook through better (I also have the confound of a new pan, though). It was a good recipe!

Orange Chicken Stir Fry

This dinner was VERY easy to make. I halved the chicken to have double the sauce to serve over rice instead of the chow mein noodles to lessen the fat content of the dish. I also used fresh squeezed orange juice (I didn't want my orange to go to waste after zesting it) for a quarter cup and regular OJ for the remaining 3/4. I ended up using all the flour as well to get to the desired thickness of the sauce - and used a whisk instead of the spoon I had been using. It was easy and perfect.

Mexican Rice III

This was a fantastic recipe - the rice ended up plump but not limb. I doubled the jalapeno's to give it more kick. I also added extra diced tomotoes (finely diced and drained).

Pesto Chicken Florentine

We loved this recipe - but tweaked it a bit. I can tomotoes so I added a pint of tomatoes to the mixture of chicken and spinach. I agree with some of the other reviess in that the spinich could be doubled - also chopped or torn into tinier pieces. Instead of chicken strips, I cut ours into bite-sized pieces. Due to the packet of alfredo sauce we bought, I also had to add a bit of corn starch to thicken it - but I think you could by prepared/jarred alfredo sauce if you wanted to. I drained the chicken/tomato/spinach mixture then added Italian Dressing to it and cooked some of the dressing off. Then I drained it again...and added it to the alfredo/pesto mixture. The pesto addes a fantastic finish!

Bella's Rosemary Red Potatoes

I prepared them as the recipe read - only I had to use dried rosemary b/c I didn't have any fresh on hand. I also added a few grinds of garlic/sea salt as well as fresh pepper. I recommend serving immediately as the potatoes will continue to soak up any left over butter/oil mixture. Good luck!
