Strawberry Spinach Salad I

Reviewed: Apr. 5, 2010
AMAZING SALAD!!! I made mine with pecans instead of almonds. The dressing is surprisingly WONDERFUL.

Whole Wheat Biscuits

Reviewed: Feb. 18, 2010
Wonderful! I doubled the recipe, except for the salt, and they turned out perfectly! Love this recipe...also, used brown sugar as it was all I had. Will make these again and again!

Working Mom's Hamentashen

Reviewed: Mar. 19, 2008
So yummy...and so easy to make. The dough was a little crumbly, so I did have to add some water. I doubled the recipe (using two cake mixes, 4 eggs, and about 1 1/2 cups of flour) and made about 36 very large Hamentashen. Actually...I made these for a Hamentashen bake-off and they won against all the "traditional" recipe ones. You gotta try this!

Spicy English Seven-Layer Salad

Reviewed: Jan. 22, 2008
I brought this to my ladies Bible study, and all the girls went nuts over it. I used half the amount of mayo though, because they're all on diets. It was a hit!

E-Z Drop Biscuits

Reviewed: Dec. 30, 2007
I thought these were very good, although a little plain. My husband LOVED them, and ate probably about 10 of them (mine made about 18 instead of 12). I didn't have any cream of tartar, but I did follow the rest of the recipe to a T. Maybe next time I'll spice them up a little bit...Very easy to make, and great paired with the Hamburger Vegetable Soup!

Hamburger Vegetable Soup

Reviewed: Dec. 30, 2007
Yummmm! My DH raved about this one (he even used the word "fabulous")! Alterations I made: Ground Chicken instead of beef, no tomato sauce, and diced red potatoes instead of elbow macaroni. Great paired with E-Z Drop Biscuits!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Jul. 23, 2007
Very yummy! I like most of the other reviewers used 3/4 cup of butter, and no shortening. I did soak the raisins in hot water to make them more plump. I did have to leave them in the oven for at least 13 min, maybe because my cookies were larger than what Beth recommended. This will be my new oatmeal cookie recipe! My husband and I could not stop eating them!

Best Peanut Butter Cookies Ever

Reviewed: May 15, 2007
PHENOMENAL!!! I just made these cookies, and they are simply amazing, so easy to make, and I had all the ingredients already so I didn't have to go to the store. I used one whole jar of natural peanut butter (creamy), one cup of natural cane sugar, and one cup of dark brown sugar. I put tin foil on the cookie sheets for easy cleanup. My family cannot stop eating them...the only problem is that I hope I have enough left for Bible Study tomorrow!

Black Bean and Corn Salad II

Reviewed: May 14, 2007
I made this yesterday for our Mother's Day Luncheon, and boy did everyone love it! I made it exactly like the recipe, except I went to two grocery stores and they were out of avocados. So I put a little guacamole in the sauce, which gave it a very nice taste. I thought I would have leftovers for lunch, but when I got my bowl it was empty! Very nice salad for something different than the average green salad.

Kidney Beans and Corn

Reviewed: May 14, 2007
Made this with reservations that my husband would even eat it. He actually complimented me on it 3 times, which means he really, really, really likes it! I served it over Brown Rice and was so tasty and filling. Will serve again!

Hummus Pizza

Reviewed: Apr. 22, 2007
I could not believe how good this is. Even my picky picky husband loved it...minus the cheese and veggies of course. On his side I used grilled chicken and spices, and mine had mozzarella, broccoli, and mushrooms. I used store bought pizza dough and regular hummus, and it was so yummy!
