Jimmy Dean Breakfast Casserole

Great recipe to use for overnight guests. I used hash browns instead of potato and added a bit of bacon to the sausage. Also added cracked red pepper for a touch of spice.

Surprise Apple Salad

I made this for Easter dinner. I added 1/2 package vanilla pudding mix to the whip cream. I don't think it is necessary to peel the apples. The peel just adds a little extra color which is nice. I think some maraschino cherries would be a nice addition for another touch of color.

Raspberry Chipotle Sauce

This sauce is amazing! Exactly like what they serve at So Long Saloon on my favorite Raspberry Chipotle Black Bean dip. It may sound like a strange combination of flavors but it is so amazing! Like one of the other reviewers, I used raspberry jam and left out the sugars and some of the vinegar. It is quicker this way and you don't have all the raspberry seeds in the sauce!

Chocolate Chip Cheesecake Brownies

I used 1.5 eggs, vanilla, and nearly twice the sugar for the cream cheese portion. Also, I baked it in layers. One more thing was I substituted 1 cup margarine for one of the cups of shortening. I think this gives it more flavor. This is best served cold. When served warm out of the oven it does have an "eggy" taste.

Addictive Sweet Potato Burritos

Yummy! I used 3 cans of beans (2 kidney beans and 1 black beans) and only added about 1/2 cup on water. I have no idea why you would need to add 2 cups of water!

Quinoa and Black Beans

Quinoa is my new favorite food! This recipe is really great. I made it exactly as said with the exception of the corn and beans. I just used some frozen southwest corn/bean mix instead of what the recipe called for.

Raspberry and Almond Shortbread Thumbprints

These cookies were wonderful and would be perfect for Christmas or Valentine's day. The dough seemed really dry at first so I worked it with my hands and that helped it come together. Then I refrigerated it for about 30 minutes. Form into tight balls. When making the indentions, press down slowly to reduce cracks. I drizzled mine with melted white chocolate!!!

Hasselback Potatoes

This didn't turn out quite as pretty as the picture for me! The potatoes took quite awhile to bake especially considering they were small potatoes. I thought these turned out kind of dry and rubbery. It is a fancy idea but I didn't think it worked very well!

Thai Pork with Peanut Sauce

I liked the many flavors in this and the crunch of the peanuts. It actually was more work than what it seemed like it was going to be. Maybe that is because my pork chops were too thick so they took forever to cook on the stove and it made our whole house smell like grease for 2 days. Make sure you get the thinner pork chops without a bone!!!

Whole Wheat Refrigerator Rolls

These rolls were great! I made some white rolls at the same time that did not rise in the refrigerator. These wheat rolls actually rose better than the white ones!

Grilled Tilapia with Mango Salsa

I love when something this healthy can be so deliscious. I will probably make the receipe again just for the mango salsa which is really good with chips. I wasn't able to use the grill so I made the fish a bit different. I marinated them and then dipped in egg and panko and fried in the skillet in a few tablespoons on oil. It was so tasty topped with the salsa! FYI, mangos are pretty gross when not ripe so make sure the one you buy is slightly soft and has a pine scent to it.

Sausage-Stuffed Eggplant

I didn't care too much for this although my husband said it was good. The eggplant turned really mushy and grey and was gross to look at. But to be honest I had never cooked it before so maybe that is how eggplant is supposed to be??? Anyway, I used spicy sausage which really added some nice flavor. I think if I had used regular italian sausage it would have been inedible.

Slow Cooker Italian Beef for Sandwiches

I also used mostly beef broth and two salad dressing packets. I also added some crushed red pepper. We ate them once without sauted onions and the italian peppers and then ate them again with those on the sandwich. It was so much tastier after those were added and I don't usually like sauted onions. We also broiled the sandwiches (open faced) for a few minutes with provolone cheese on top. So scrumptious!!! I had to freeze two more meals of this stuff because it makes so much. It freezes great! I just warm it up again and add a little more beef broth to the meat.

Scalloped Potatoes I

Super easy & very tasty! I used about a cup of shredded cheese (mixture of mild chedder & mozzarella). I also mixed about a quarter cup of milk with the can of cheese soup. I covered the dish with foil for the first half of the baking time.
