About this Cook
I recently retired (Feb 2007) after 25 years as a scientist working on quality and food safety of fresh fruits and vegetables. I now have more time to cook, although I have been cooking most of my life.
My favorite things to cook
I especially like spontaneously creating my own sauces and marinades, making something interesting out of leftovers, and cooking for small groups. I have really enjoyed baking breads lately.
My favorite family cooking traditions
I grew up eating mostly a mixture of Italian (Mom) and German (Dad) cuisine. I didn't eat vegetables as a kid, but have grown to love them. Probably our two favorite family meals were rouladen & spaetzle and lasagne.
My cooking triumphs
People have tended to really enjoy my barbecued country-style pork ribs.
My cooking tragedies
A story my Mom likes to tell is when I surprised her with a lemon meringue pie during a visit to see me when I lived in North Carolina working on my Ph.D. It looked great -- but I had somehow forgot to bake the crust first. How silly and embarrassing!

Apple Crumb Pie
This is an excellent recipe, and my family really liked it. For health reasons, I used 1/2 cup of Splenda instead of 3/4 cup white sugar. I agree with slicing the apples thin (I slice them about 1/8" thick) because this gives the pie a much better texture, making it a little crispy and fresh, but not overly crunchy and raw like some apple pies that slice the apples in larger sections (like 3/4" thick). Personal family preference led to me using twice the cinnamon and walnuts. I also replace the raisins with dried cranberries instead. The pie was a winner. Thanks for the excellent recipe!

Easy Salsa Meatloaf
I thought the salsa idea, to replace the typical onion, green pepper, and tomato sauce, was a good one. The meatloaf turned out to be very tasty, and my family enjoyed it. I think I would avoid using salsa with a lot of cilantro, however. Thanks for the recipe.

Spicy Black Bean Cakes
These were good and I will make them again. They were quite dry and fell apart easily, so next time I will try using 3 eggs to help hold them together. I will also use more Jalepeno to make them more spicy for our taste. The sour cream (I used fat free) was very, very good with them. But, next time I will use a bit more lime juice and Jalepeno. Thanks for the recipe!
