My cooking tragedies
When I first got married many years ago, we got our first microwave and I attempted to cook carrots in a corningware dish with a glass lid...anyway, I inadertantly set the timer for 25 minutes and went out in the backyard, next thing I knew the glass lid of the corningware was a molten mass and the carrots had turned into little charcoal briquettes! My husband has never let me hear the end of that one! :)

Mushroom Chicken Piccata
Lemon and mushrooms...wasn't quite expecting the combination. Not sure if I like it or not. Otherwise, it was an easy dish to put together. The only thing I did different was to bake the chicken instead of frying (I do not fry any meats whatsoever anymore) and I used seasoned bread crumbs instead of flour. Will try it again but maybe cut down on the amount of lemon juice.

Cheese Ravioli with Three Pepper Topping
Great alternative to a tomato sauce. I used veggie broth due to my daughter being vegetarian, and added a pinch of salt and fresh cracked pepper along with a tbsp of fresh, chopped parsley at the end. Excellent over home-made spinach/ricotta ravioli! Thanks for the recipe!

Pork Tenderloin with Apples
Excellent pork tenderloin dish. Only change I made was to drop the wine (subbing with more stock), and adding a splash of spiced rum, WOW is all I have to say. Hubs raved, that's a feat unto itself. :)
