Burrito Pie
I prepared the meat filling in my 5.5 Le Creuset French Oven. I seasoned the meat with chili powder, garlic salt and ground pepper. I used mild taco sauce, fat free refried beans, and four whole wheat flour tortillas for each tortilla layer (total of 8 tortillas). This was baked in a 9X13 foil pan. I was able to fit most of the meat filling in that pan. I only had about 1 cup of filling leftover. Once ready to serve, I topped with fat free plain Greek yogurt (instead of sour cream) and served with a side salad. This makes about 8 adult sized servings. I would serve with tortilla chips and guacamole. Very easy and tasty recipe.

Best Black Beans
I sauteed some onion and minced garlic in a little olive oil. I added a rinsed and drained can of black beans and sauteed for a minute. Then I added 1.5 cups of water, a dash of chicken bouillon, 1/8 of a teaspoon of cayenne pepper and 1/8 of a teaspoon of Sazon Goya seasoning. I topped with cilantro and allowed to simmer on low for 5 minutes. Very easy and tasty.

Enchilada Casserole III
I minced half an onion, half a green bell pepper and half of a red bell pepper and sauteed that in olive oil. I only had 1 lb. of ground beef (I think 1 1/4 would have been great). I seasoned that with freshly ground pepper and garlic powder and browned. Added ground cumin and chili powder once meat was browned and drained. Tastes great with reduced fat Mexican blend cheese, canned Las Palmas enchilada sauce (mild-I had that on hand so I used that instead of preparing sauce according to recipe), and fat free refried beans. Serve with light sour cream. I also used homemade corn tortillas. I found an easy recipe on Pinterest that I made the day before. Overall, this recipe was easy, healthy and very tasty!
