Mock Lemon Chiffon Cake

Very tasty! I made this for a friend's birthday, who doesn't like anything too sweet. She loved it. The only things I did different was to use less milk with the lemon pudding (to make the filling more firm) and I added some lemon zest to the sides, after frosting. That gave it a little extra zing and made it look really pretty.

Real Italian Calzones

Not a favorite with my family or a friend we invited over to taste test the recipe. It looked good on the plate, but it didn't do much for the palate. The crust was too thin and crispy. The filling was unexciting and flimsy. It just didn't have good texture or flavor for our preference in a calzone. We go for something more hearty and flavorful.

Angel Chicken Pasta

Had left over rotisserie chicken, so I made everything on the stove top. Very quick and easy. Done in 30 minutes! Taste was really good. Would make this again, with extra sauce! I am editing my review and bumping it up to a 5 star, as I found myself making this 3 times since my original review above. It's addicting! For the ease of preparation, taste, and because I changed very little, this is one of my favorite recipes on this site! Thank you Marian!

Chicken Avocado Casserole

I made this recipe with no changes, except I substituted toasted walnuts for almonds, because that's what I had. Although I liked it, I have to say I will not make it again. There are so many more unique and flavorful recipes for chicken on this site (for my taste). So, a good meal, but not a "repeater."

Gary's Stuffed Mushrooms

The stuffing amount is WAY too much for the number of mushrooms. I would say you could use 12 portabello mushrooms and be good. Other than that, I think there's way too much butter and the cream cheese and chicken flavored stuffing mix drowns out the taste of the crab (I used real crab). Next time I would decrease those amounts, by at least a third, and maybe add some minced onion, white wine, and Old Bay seasoning.

Homemade Vegetable Soup

This is a great back to basics recipe, which is why I'm giving it a 5-star. It was just what I was looking for. There are so many ways you can expand upon it and still end up with a good tasting, healthy recipe. I changed things up, according to what was in my refrigerator/garden. Added fresh zucchini, tomatoes, garlic, and cilantro. Didn't have green beans or Great Northern beans. Shredded a couple of chicken breasts and tossed them in, just because I'm feeding youngsters who need the protein. Served with grated cheese, rolls, and sour cream. Very satisfying meal. May try ground turkey next time. Thank You!

Lemon Garlic Tilapia

So simple and so delicious. The fact that it's also healthy makes this recipe a favorite in our house. The most important thing is to get good tilapia. I've tried a few frozen brands and find the one Costco carries to be the best tasting.

Easy Mushroom Rice

I have a rice cooker, so instead of baking, I dumped everything in there. I used 1/2 the amount of butter to save fat/calories and I used fresh sliced mushrooms, because I don't really care for the taste of canned. It came out great, in less than an hour, and even my kids ate it up. Next time, I think I might add a little dry sherry and more mushrooms!

Taco Seasoning I

Fantastic! Adjusted to suit the family (less heat for the kids & more cumin for me & the hubby). Quadrupled the batch to store for future meals. Will never buy pre-packaged seasoning again! Thanks for the recipe :-)

Blender Hollandaise Sauce

Delicious! So mush easier and better than using the tradional method. Very creamy. Reduced the amount of lemon by about half and would use unsalted butter next time, for my taste. No more double boilers!

Shrimp Francesca

After reading the current (June, 2010) "Most Helpful" review by Jeaux Bee, including comments by Francesca herself, I followed the recipe exactly, but added cherry tomatoes as a suggested option and served over angel hair pasta. Many of the less favorable reviews found the dish to be "bland." I would describe it as "light" and think that was the intention with this dish. For my taste, I do agree that it needs a little something. I will definately make this again, and keep the cherry tomatoes, but will try sauteing the garlic (and call me crazy, but I would use even more) in 1/4 cup white wine or dry sherry and use half the amount of butter. I would also add salt and pepper to taste. And it really made a beautiful presentation! Thank you Francesca!

Hudson's Baked Tilapia with Dill Sauce

This was really yummy and I would make it again. My 5-year old scarfed it down and my 3-year old took a few bites, though I used less spicy herbs on the kid's portions. I followed the recipe exactly, for the husband and I, and served with simple spinach and traditional scalloped potatoes. I'm not giving this dish a 5-star rating, only because I have even more favorite recipes for tilapia. This one is still a keeper though. Thanks KHUDSON3!

Banana Crumb Muffins

These are delicious! My 5 and 4 year old devour them. I followed the recipe exactly, the 1st time I made them. Using other reviewer's suggestions, I now add 1 tsp vanilla, replace 1/4 c of the white sugar with brown, and use canola oil instead of butter for the batter. Either way this is a keeper!

Rich Chocolate Frosting

Topped a strawberry cake with this frosting and it was very creamy and yummy. The kids loved it, and though delicious, it's a little too rich for me. Were it up to my kids they would give it a 10-star! We settled on 4. Thanks for this recipe. It's a keeper!

Marinated Baked Pork Chops

I've made this twice so far. It is so quick and easy and very tasty. I throw the sauce drippings from the baking dish into a saute pan, add a little flour and white wine or dry sherry, and cook until slightly thickend. This gets poured over the chops and served with mashed potatoes and veggies. A keeper!

Roasted Garlic Lemon Broccoli

Holy salt! This did not work for my family at all :-( I followed the recipe exaclty, but the broccoli came out waaaaaayy too salty and dried out. It stunk up my house, and for no good reason (and I love broccoli). Sorry, but I won't be making this again.

Mushroom Chicken Piccata

This was "good." Used 4 big fat chicken breasts and pounded them down thin. Not all the breasts would fit in the pan, so I browned them in two batches and set aside. As a reviewer suggested, I de-glazed the pan with white wine and cooked the mushrooms and onion separately. Poured in the sauce (made extra since serving over dry angel hair pasta and it need some extra), and brought to a boil. Tossed the chicken in and sauteed on low for about 20 minutes. Since the breasts were thin, they were very nearly done already. I thought it turned out okay, but the husband raved. The two kids, under 6, ate a few bites. All and all, I would make this again, but maybe add capers. I think that's what was missing for me. Thanks for this recipe!
