Salmon Salad

This is a very good change of pace from the typical tuna salad. I used more mayo for moisture, the juice of one whole lemon, and less salt, about 1/2 teaspoon. For more flavor I added 1/2 teaspoon curry powder, 1/2 teaspoon Mrs. Dash Lemon Pepper, 1 clove caramelized garlic crushed, 2 jalapenos chopped, 1 tablespoon capers rinsed and drained, and fresh ground pepper to taste. Served on a bed of fresh spinach, splashed with balsamic vinaigrette.

Broccoli with Garlic Butter and Cashews

Great flavor and very quick and easy to prepare. I steamed fresh broccoli in the microwave. For South Beach considerations, I substituted Smart Balance for the butter, Splenda brown sugar (2 t), and low sodium soy sauce. I'll be using this recipe again, and next time want to try balsamic vinegar. **************************************** Update: Suggestions from SPOW, XANNI48 and ELKA pointed to stir fry. Reduced Smart Balance (butter) to 1/4 cup. Used 2t of arrowroot to thicken. Stir fry reduces moisture over steaming. Balsamic vinegar is great. I could enjoy this several times a week!

Pasta e Fagioli a la Chez Ivano

Many thanks to Ivan for this great recipe which is easy to follow. I cut the recipe in half, and departed from the recipe in a few areas based upon personal preference. I used Italian sausage rather than ground beef, low-sodium chicken broth rather than beef consomme, and garnished with fresh grated Parmesan cheese. I love garlic but balked at using the amount called for - I cut it in half. I will use more next time, and will probably end up where Ivan recommends. My wife and I loved the soup. I served the rest at a pot luck luncheon the next day, reconstituted with a can of broth, and it was quickly consumed with many compliments.

Soba with Toasted Sesame Seed Sauce

This is a very quick and easy way to prepre soba. I used Chinese black vinegar, and otherwise followed the recipe. Next time I will make more sauce, and lightly steam the broccoli. Also, I will try with peas and mushrooms. I am very interested in trying cold leftovers tomorrow. Thanks.

Jalapenos del Raton

I made these a day ahead for a pot luck at work and they disappeared quickly. To be honest, they were better fresh off the grill, but were still quite tasty warmed up the next day. I browned hot Italian sausage and mixed it with reduced-fat cream cheese, adding garlic and onion powder to taste. Turkey bacon works well with these. Not as spicy as you might expect. These are great but I will experiment with lighter alternative ingredients, such as chicken or sautéed onion.

Unbelievable Chicken

Thanks LETSGGGO for a great recipe. I grill a lot of chicken, and am always looking for other recipes. My general rule for marinades that call for lemon/lime - double the juice and add the zest. This one is easy and the results are flavorful.

Basil Shrimp

Excellent flavor. I scaled the recipe to 2 pounds of shrimp. I used olive oil instead of butter, Beaver brand Deli mustard (from Wal-Mart), and Dorot frozen cubes of basil (from Trader Joe's). I did not find the mustard flavor overwhelming as others did. I think perhaps Dijon mustard is not a good choice for this recipe. I will do this recipe again and again. Good appetizer, or over pasta, or on a salad.

Grilled Garlic Parmesan Zucchini
