Delicious Egg Salad for Sandwiches

Don't be deceived by this recipe's simplicity. It is simple, but delicious. I don't like egg salads that are overly sweet or vinegary. This was perfect!

Pork Chops with Cranberry Balsamic Sauce

I gave this recipe three stars because it was a happy medium. The meat turned out really well and we all enjoyed it. However, the sauce did not work for me and I made it exactly like the recipe. The problem was that I reduced it too much I think. The combination of balsamic vinegar and cranberries was too biting and acidic. Next time I think I would try cherries or apples in the sauce and definitely leave the sauce less reduced. I will make it again though because I think it is a solid recipe.

Apple Crisp II

I made this for a coworker's fall birthday and it was fantastic. I used Fiji apples, which bake well. The amount of topping to apples ratio was perfect too. I always have issues getting crisp topping to be the right consistency when I use cold butter. Finally, using melted butter, the consistency was exactly right. My husband was surprised. He's a professional baker and cutting in melted butter flies in the face of baking logic, but I've used it in other recipes and it works. Well done and thanks for sharing Diane!

Old Fashioned Mac and Cheese

This tastes just like the mac and cheese I remember eating at Sunday dinners as a child. It was a big hit on Thanksgiving this year. It didn't last 20 minutes and I made a big batch! I used Velveeta for my processed cheese, sharp cheddar, and cream cheese since I'm not a swiss cheese fan. I also melted the cheese in the roux after it came to a boil rather than pouring the white sauce over the cheese and macaroni. Fabuloso!!! I was reluctant to add the onions because I was afraid they would be too strong, but I sauted them until soft (around 3 minutes) and they really add to the flavor. I think dried onions or powder would probably work well too. You could add some cubed up ham or turkey ham, or bacon if you're feeling extra decadent. Thanks for sharing Jayde!

Quiche Lorraine I

Yet again, another winner from AR! This recipe is excellent as is, but I was trying to use up an abundance of spinach from the garden so I add a couple of handfuls, chopped. Also, I didn't have swiss cheese so I used cheddar (which I know is quiche sacrilege, but it worked.) I was concerned that there weren't enough eggs, but this cooked perfectly and I will be skeptical of recipes that use more than this in the future.

Fresh Asparagus Soup

I wish I could give this more than five stars! So good that my family was begging for me to make it again (which is good because we had a lot of asparagus this season). I've never considered myself an asparagus person, but I think this recipe converted me! I used chicken stock instead of vegetable broth, skim milk, and non-fat Greek yogurt, which almost made this taste like it had cream in it. Smooth, creamy, and elegant! I can't wait for local asparagus season next year so I can make this again.

Stuffed Zucchini with Chicken Sausage

These were okay overall, and the filling by itself was very good. I didn't blanch the zucchini beforehand, which was a mistake. It made it difficult to scoop out the flesh and my family complained about the zucchini being undercooked. I will parboil next time and I think this recipe will be a winner! As a side, I sauteed the extra squash flesh with a little butter and fresh herbs and it was excellent!

Green Chicken Enchilada

I was afraid the filling was going to be too bland, but once again, I've learned that simplicity often makes for the tastiest food. I doubled this recipe and froze a batch for later. They freeze beautifully and may actually even be better. I'm so glad I found this recipe!

Cheesy Chicken Meatballs

Phenomenal! I was skeptical but I couldn't ignore the positive reviews, and I'm so glad I didn't! I used ground turkey instead of chicken since it was easier to find. It pairs well with a simple rice pilaf (think homemade rice-a-roni). My only complaint is that they were too good and we didn't have any leftovers so next time I will double the recipe! One other tip, I like meatballs to have a slightly browned appearance so I cooked these under the broiler for the last 5-7 minutes. They were still perfectly cooked and looked "pretty" too. Thanks for sharing!

Easy Strata and Variations

This was a big hit at brunch. Even people who I would consider "picky" ate seconds and took some home. Because I wasn't sure what would be considered too adventurous, I simply used (turkey) Canadian bacon and sharp cheddar cheese with the eggs and bread. No onions. I was skeptical of using an entire quart of half-and-half, but was amazed at how much the bread absorbed so if you have reservations, I am here to say that it actually does work. The cook time took considerably longer than 50 minutes, but I also refrigerated overnight and I don't think it was quite up to room temperature so keep that in mind. I will definitely make this again!

White Chocolate Fruit Tart

This. Was. Amazing! My husband is a baker, and was a little skeptical about the crust since its only liquid came from the butter, but it came out perfectly tender with a perfect crumb. I used an extra 2 oz of white chocolate chips since 12 oz came in the bag, and I couldn't tell the difference. Also, I didn't use pineapple juice for the glaze, but instead the mandarin orange juice and it worked fine. Great recipe!

Oil Pie Crust

I can unequivocally say that this was a disaster. I think there was just too much flour. I followed the recipe exactly and couldn't even get it to roll out. It just fell apart. Most people didn't have a problem so it must be me. However, if a pie-crust disabled person can't make it work, then it negates what should be an easy recipe.

Swiss Chicken Casserole II

This was a good recipe that my family enjoyed. The only thing that I did different was to use 1 cup of fat-free chicken broth in place of the butter to knock off some of the fat grams. I will definitely make this again when I need something quick for dinner.

Fish Tacos

These tasted just like the fish tacos I had when I was in San Diego. Everyone in my family loves them. The only thing I did different with these tacos is use sour cream in the sauce instead of plain yogurt because I had sour cream on hand the first time I made them. Very tasty! I'm making myself hungry. I know what I'm having for dinner tonight!
