Baked Pork Chops I

By husband said this is the best dish I have ever made! I used cream of mushroom soup with roasted garlic and added some sauteed onions and garlic to the sauce as well. I was a little skeptical of the recipe initially, but I am not a big pork chop fan and it was excellent. I used the amount of wine called for and I think that worked well.

Bearnaise Sauce II

Delicious! I will make Bearnaise sauce much more often now, this is so easy. I used shallots instead of onion and dried parsley instead of fresh. Be careful not to over-cook it. Mine only required 40 seconds to get to the right texture. If you overcook it the butter will separate out and mess us the consistency.

Shrimp Enchiladas Suizas

This is a great recipe. I have always used the shortcut of using salsa verde from a can and turns out great. Someday I will do the full version but substituting the salsa verde for the jalapeno peppers, tomatillos, onions, chicken broth and cilantro still turns out great.

Quick and Easy Green Chile Chicken Enchilada Casserole

Husband loved it! I boiled the chicken instead of baking it. I also added some taco seasoning and mixed the chicken and sour cream together and added some onions. It was fantastic!

Slow Cooker Guisado Verde

Excellent recipe. Just the right amount of kick. I couldn't find canned tomatillos so I used 24 oz diced fresh tomatillos. I used chicken broth instead of water and a slightly larger roast. I think you really need a shoulder roast to get the right texture. I don't think this would be as good with a loin roast.

Honey Walnut Shrimp

i couldn't find mochiko so used tempura breading. The recipe was good, but not quite like the walnut shrimp I have had at restaurants, and the time and effort wasn't quite worth it.

Slow Cooker Mashed Potatoes

These are the best mashed potatoes yet that I have tried off this site (and I have tried many of them!) The time in the slow cooker doesn't matter a whole lot, I have found. I don't time it, I just put them in until everything else is ready. One hour on high works to cut down on the time.

Chicken with Lemon-Caper Sauce

Absolutely outstanding, much better than I was expecting. The sauce is a little thin, so if you want it thicker you will need to thicken it up, but I did not mind and it was excellent. It is one of my husband's favorites.

Fettucine with Heavenly Salmon Sauce

Recipe seemed to be missing something, although not sure what. It was fairly bland. Not bad, but wouldn't make again. Sauce was also too think. Didn't need the cornstarch and I had to add milk to thin it out. Maybe would be better with a lighter pasta like angel hair.

Cousin Cosmo's Greek Chicken

Outstanding! I used a mixture of chicken broth with some white wine instead of the water and bouillon. I also waited until the last few minutes to add the spinach and tomatoes and i think it was much better that way.
