Amish Breakfast Casserole

This wasn't a breakfast casserole...it was pure cheese and potatoes. Not enough egg, not enough meat, no veggies, NO spices and TOO MUCH cheese. My husband, who eats almost anything, asked me not to make this again. He said that plain 'ole scrambled eggs and bacon would have been better than this, and he wouldn't have had to wait a half hour for it.

Deviled Eggs

TOO SWEET! These weren't good at all. The sugar over-powered everything else. I ended up adding more mustard and vinegar to even it out. My hubby ate them, but he also eats "fake" deviled eggs that are just the yokes mixed with mayo and pickle relish. i won't make these again.

Sour Cream Chicken Enchiladas

This was really good. I used a good quality salsa verde and red salsa. (forgive me if I'm wrong but isn't normal salsa jalapeno salsa since jalapenos are in it?) Anyways, I eyeballed the cilantro, and salsas, and tasted while blending. I didn't use a whole bunch, but about half was good. I also used Light sour cream, and to give the chicken more flavor I used taco seasoning on it. I poured the sour cream mixture, and even more salsa verde and red salsa over top along with the cheese. I didn't want it to look too pale. I'll definitely make this again!! It was good.

Charleston Breakfast Casserole

This is FABULOUS!!! This is the perfect recipe to add to or take away from depending on what you have in your kitchen. I added onion, and mixed in a few handfuls of potatoes, chopped ham and fresh mushrooms. It was delish!! I made it last night and all I had to do was pop it into the oven this morning. Perfect. The egg mixture was creamy and the croutons weren't soggy. I will make this again and again!! Thanks so much for a great, tasty and different breakfast!!

Classic Red Beans N Rice

I think that it was missing something. I added more spices as per someone's suggestion...maybe it was because I didn't use sausage, but I only had the meat...but I used a smoked ham bone from Christmas ham dinner. And I missed the part about leaving it uncovered, so I had a TON of broth and no "sauce"...I'm definitely making this again to try with the sausage, I think that might make this a good 4 star recipe. As it stands, it's way too bland.

Easy Baked Ham

I used this on our Christmas Day ham and it was FABULOUS! Since it was a whole ham, I spiked it with whole cloves around the top and used fresh pineapple (that I cut into rings and placed on top of the ham). I mixed the brown sugar into the ginger ale (Vernors of course) and poured that overtop and let it drain into the bottom of the pan where I placed some pineapple chunks. Every 10 minutes I basted with the juice from the bottom of the pan, adding more gingerale as needed. This was the BEST ham I have ever made. It wasn't too sweet (we don't like that) and the cloves weren't over-powering and the best part was that the ham was so juicy!! I will make ham like this from now on.

Gramma's Old Fashioned Chili Mac

I only used this recipe because I had a can of tomato soup...but this CANNOT be called chili...there's no chile's, chili powder, cumin....nothing. Tomato soup, tomatoes, and kidney beans doesn't make chili without the spices. I added a cumin, chili powder, garlic, organo, salt & pepper in order to make this even resemble chilimac. This should be changed to hearty tomato stew, or soup even.

Mexican Pizza I

This was really good!! I used tostada shells because I didn't have tortillas but the effect was the same and I didn't have to fry them. I put beef, beans, taco sauce and cheese on the shell, topped with a second shell, more taco sauce and cheese, then broiled them until the cheese was melted. I sprinkled with diced tomatos and sour cream. Next time I'm gonna put on chilis and green onions (I didn't have them this time). All in all, a great change from nachos or tacos and it didn't take any more time. Definitely a keeper!!

Corned Beef and Cabbage

My husband and I don't care for cabbage, and he's never had corned beef before so he was leary. I couldn't fit everything in, so I think that half the carrots and potatos made it in. I also crammed in as much cabbage that would fit. This needs to be either a smaller piece of meat and less ingredients or a much larger crock pot. I used a 5 1/2 qt. one. This wasn't the best corned beef I've eaten, but for convience it was good. I might make this for next St. Patty's Day, but I won't make it for an every day meal.

Tender 'n' Tangy Ribs

This is good. I will probably use this recipe again when we have ribs. I put all the ingredients in a pasta pot on the stove and boiled on med. until done. Then I basted with BBQ sauce and broiled for 10 minutes. The ribs were also good cold the next day on a bun.

Awesome Slow Cooker Pot Roast

This was fabulous!! I used a pork roast instead (mostly because when I looked this up I forgot that it was pork!! LOL) At any rate, I did substitute the water for beef broth and not only did my house smell absolutely wonderful, but the dinner itself was restaurant quality in taste!! I was very impressed and I can't wait to try this on a beef roast!! Thanks for the recipe!!

Cheesy Italian Tortellini

This wasn't any good. Canned sauce, pre-made tortellini, & canned mushrooms?? I could have come up with that on my own. I've made this a few times tweaking it...but got too far away from the original receipe to count it...it was a waste to have to dirty my slow cooker for this. I've even made this on the stove and the taste was the same. Unless you're making your own sauce, this doesn't need to cook all day. It doesn't dirty any more dishes than using a slow cooker. Two (skillet for the meat & sauce pot)...won't be making this again.

Doreen's Ham Slices on the Grill

Holy cow!! This is Julie Andrews spinning around on a mountain top good!! I used the original recipe...but I changed the amount of brown sugar. My husband doesn't like Honey ham at all, so I was afraid that he would think this too sweet. So I started with a 1/2 c. packed brown sugar...then whisked in another 1/8 c. un-packed until the taste was spicy with just enough sweetness. I then cut (not scored, but actually cut slices into the ham steak) and put a few tsps of the marinade into a ziploc bag and marinated the ham for an hour, while reserving the rest. We don't have an outdoor/indoor grill because we live in an apt and have an electric stove....so I put this on a cookies sheet and broiled it while basting it a few times. I served the remaining marinade on the side for dipping....but I found simply pouring a little over top after cooking tasted the same. For myself I sprinkled on a little red pepper flakes (but that's a new craving for me so I eat it on everything) I tasted my husband's without it and it was DIVINE!! I served with steamed corn. We will definitely have this again. It was AWESOME!!!

Polish Style Lasagna

This is real excellent!! My husband made quite a face when I told him this was for dinner...but he was more than happy with the results. I used Betty Crocker Roasted garlic & cheese instant mashed & mixed in the cream cheese & 1/2 cup sour cream. I layed the onions in between the noodles & potato mixture...and added an extra layer of potatoes then sliced mozz on the very top. After baking, I stuck it under the broiler for a few minutes to make the cheese bubbly & give it some color. I also sprinkled with some paprika...it doesn't look appetizing at all, but the taste is FABULOUS!!I will definitely make this one again.

Boilermaker Tailgate Chili

This was FABULOUS!! I made a few changes due to my groceries...but I tried to stick with the original recipe. I didn't have celery so I used celery salt. No basil, or chilis...so I used a can of diced tomatoes with green chilis. There was just the right amount of heat and so much flavor!! My husband was a little taken aback by the red & green peppers and sausage...(I took the sausage out of the casings and browned it with the gr. meat). We both agreed that this will be the only way we eat chili from now on. What an awesome recipe!!

Grilled Salmon Steaks with Savory Blueberry Sauce

I didn't think that I would like this but it was good. And for all the "professional" cooks out there who don't know how to add cornstarch without it lumping....speaking as a beginner you can always add it to a little cold water and stir until well mixed then add it to the sauce. I've NEVER had it lump at all anytime I do that. But I AM just a beginner!! Great recipe, I will definitely try it again.

Super Grilled Salmon

I make this every time we have salmon. We haven't found a better marinade yet!! I skip the lemon pepper only because it's such a small amount that you don't even notice it's in there. And I have found that if I try to mix the corn starch in cold water before the marinade is boiling....it doesn't thicken the sauce like it should. I place the salmon on a bed of rice and pour the sauce over top, it's excellent!!

Seafood Salad Supreme

This was really good!! I used canned crab and shrimp (it works better with my budget), I omitted the celery but added some celery salt. I also didn't do the almonds...it sounded kinda leary to me. I increased the Old Bay, used 1/2 c. (each) sour cream, mayo & miracle whip. This was soooo yummy!! My husband said it was one of the best seafod salads he's eaten!! I'll defintely make this again!!

Bacon Ranch Pasta Salad

I made this for a church social and it got rave reviews!! I used pre-cooked bacon so all I had to do was nuke it until crispy. I also followed another reviewers suggestion and added sliced zucchini and grape tomatoes. I have since made it a few more times for a quick meal for me and my husband....the left-overs are great to take to work for a light lunch!!

Pasta Salad II

This is really good...but better after I added a ton more veggies. I used chopped zucchini, cukes, grape tomatoes, sliced black olives, and a red & green pepper. The flavor just seemed to pop. Really good pasta salad for a hot summer night.
