Blue Cheese Burgers

Venison Pot Roast

My wife asked me to make a beef pot roast. I found this recipe and thought I’d try it with beef, instead of venison. WOW did it turn out well! I used a quality 3LB piece of top round roast, browning it as the recipe describes. I also used red potatoes, with the skin on, instead of peeled white potatoes. I cooked everything in an iron Dutch oven on the stovetop. It made SO MUCH gravy, it wad more like a very thick stew, which was fine with us! We just used very good, whole grain bread with fresh butter, to help clean up the plates! This will be one I make again!

Connie's Zucchini "Crab" Cakes

We thought this was OK, nothing too over the top. If we make it again, we’ll use the regular bread crumbs instead of the Italian and add more of the Old Bay Seasoning. Also, my wife had a great method for getting the water out of the zucchini. After grating it, she simply wrapped it up in a very clean dishtowel. She then wrung the towel as tight as she could, squeezing out the water. She used two towels in all and the zucchini came out perfect!

Grilled Salmon I

WOOO HOOO! Boy did my wife like this! It was raining really hard out last night, so instead of grilling I prepared this inside. I used a whole lemon’s juice and rough ground pepper instead of the lemon-pepper stuff. Also, I simply mixed it into the soy sauce/brown sugar sauce instead of directly to the fish. I placed the fish, with all the sauce, in a Ziploc bag and let it sit in the fridge for 2 hours as recommended, turning it every so often. I then took a glass casserole dish and wiped olive oil on the bottom. I placed the filet, skin side down in the dish. I also poured a little extra sauce over the fish. Baked at 450°F for 12 minutes, then broiled for 10, as suggested in another review, it came out perfect! I served this with steamed rice and steamed carrots. Mmmmm.. We’ll be eating this again!

Beef Stroganoff III

I cooked this for my wife and mother in law. I took some of the advice from a few of the reviews here and made a few small changes. I added the 1tbs of Worcestershire Sauce. I also added a little garlic as well as marinating the beef in wine before cooking. I also used fresh mushrooms, which I sautéed with the green onions. There are NO leftovers!!

Raisin Rice Stuffed Chicken

I made one chicken for my wife and mother-in-law. I’m happy to say there were NO leftovers! They both seemed to really enjoy this dish, as did I. I think we’ll be eating it again!

Balsamic Green Bean Salad

I tried this but I steamed the beans, and I didn't use 2 tablespoons of garlic. I thought that was a LOT. I still used too much though and my wife and had the taste in our mouths for a couple of days. Next time, I will not use any at all and see how this turns out. I'm sure we'll enjoy it. Overall, a decent side dish.

Vidalia Onion Tomato Pizza

I’ve been doing 90% of the cooking these days, trying to feed my little, pregnant wife the best meals possible according to her whims. The other day she wanted, “Pizza with lots of onions and a red sauce.” This recipe fit the bill PERFECTLY! I did make one major change though; I am no good at making dough. I ended up using two Boboli pre-made, whole-wheat crusts. I followed the rest of the recipe, using all organic ingredients. I ended up with TWO very thick and very tasty pizzas! She at half of one by herself! (And she’s small!) The other I gave to a neighbor and they gobbled it up as well. Excellent!

Strawberry Spinach Salad I

My wife is 7 weeks pregnant and starting to get “fussy” about what she eats. Just the thought of some foods makes her feel queasy! Yesterday, when she told me she didn’t think she could eat ANYTHING I had to think fast. I looked around the site until I found this AMAZING salad recipe! Lots of strawberries for vitamin C, plus all that spinach! Woo-hoo! A combo she not only LOVED but ate a lot of! Both of us polished off a good 5oz. of spinach and a ½ quart of strawberries! The dressing is superb! This is now one of our favorites!

Slow Cooker Beef Stew I

My pregnant, vegetarian wife surprised me with a request for something with meat, potatoes and gravy the other day! I couldn’t find my old recipe for beef stew, one I used to LOVE, so I came here and found this one. Basically, it’s the same as my old one. I just added some peeled and diced turnips, used a Vidalia onion and added about 20 white, pearl onions to the mix. I used to brown the meat after coating it with flour but tired the method described here. It worked PERFECTLY! My pregnant, vegetarian wife is not a vegetarian any longer… LOL She LOVED it!

Tofu Peanut Stir-Fry

My wife loves when I cook this for her. I made a few changes to make it a little more interesting though. First, I use The Best Thai Peanut Sauce recipe I found on allrecipes. Instead of frozen stir-fry veggies I use fresh red bell pepper, a yellow pepper, fresh snow peas and a can of sliced water chestnuts. I also use a light flour instead of the cornstarch. Before serving I also add a little extra sauce as my wife likes it that way. Personally, I really enjoy making this dish!
