Mexican Casserole

This is an awesome and easy way to get a Mexican food fix. Living in London but being from Southern California I'm constantly trying new ways to make yummy Mexican food at home. My husband and I loved this. I didn't tweak the recipe this first time but might experiment in future. Delicious!

Double Layer Pumpkin Cheesecake

This has now become a must have at all holiday and dinner parties! We love, love, love this cheesecake. The pumpkin and cheecake together are marvelous. No chancges needed, this is excellent.

Salsa Chicken

Delicious! My husband is a veggie so I used vegetarian chicken fillets but it made no difference.. it was wonderful! Loved it
